    CORRECTION:
    In the video, I say 1 tablespoon of vanilla extract but it should be 1 teaspoon.
    INGREDIENTS:
    3 medium ripe bananas, mashed
    1/2 cup homemade hemp milk*
    1/4 cup golden flaxseed meal (110g)
    1-1/4 cup tiger nut flour (110g)**
    1/2 cup cassava flour (65g)**
    1/4 cup arrowroot starch (25g)**
    1/2 cup coconut palm sugar (75g)
    2 tablespoons baking powder (GF/CF/AF)

    Oh I love banana bread. We normally freeze out about to go bed bananas and make bread later. So good.

    If I wanted to make these into muffins what would be the temp and time be? thank you!

      If the cookies in the video baked for 25-30 minutes at 350°F, I would estimate that smaller muffins would take around 30-40 minutes.

    I noticed that is not oil in this recipe. Looks like I can bake without oil 😊. Nice.

    I need alternate for tiger nut flour

      Can you consume almond flour/meal? You can use that as a sub if you want.

      @@FreshisReal Thanks mam..Basically need ideas or recipes with no wheat no rice only various millets,oats bread if possible.. with less costly options with things available in India ..

    Thanks so much for the lovely recipe:). We can’t consume bicarbonate soda that is in the baking powder. Would the bread work without the baking soda/baking powder? I read that adding sparkling water sometimes helps but not sure if in this case. Would you be able to advise on walkaround?

      Hi! I don't know what else you could try to help with the rise. Thing is cream of tartar reacts with the baking soda that is in the GF baking powder, but on its own, I'm not sure that cream of tartar will do much. As for the sparkling water… you could try, but I don't think it will do much for this recipe. This banana bread is already very different from other gluten-free, vegan banana bread recipes, and even though it might be a bit denser without the BP, I'm sure it would still make a good treat. If you don't want to waste ingredients, consider baking a half batch in a small bread pan.

      Thanks so much for a prompt reply and advice:). I don’t mind the bread being denser without BP. I was concerned that lack of BP wouldn’t allow the bread to bake properly and the dough would be still raw in places, making it hard for the stomach to digest. I’m very happy to hear that the bread would still work without BP:). Thanks so much for this advice:). I’ll give it a try.

      @@hhexeh Please note that I haven't tried without. It shouldn't affect the baking times of the banana bread. Again, maybe trying a half batch would be a great way to start. There are lots of notes in the recipe post if you want to change the ingredients or reduce the starch.

      Thanks so much again for your advice:).I’ll play with it to see if it’s baked inside as this is what I struggle most when baking without baking soda (dough baked outside properly but inside is questionable). Separately, you listed kuzu as substitute in starched for baking, have you tried to use it in baking? I’ve googled it and never found any post on baking with it. If it’s possible, would you first dissolve it in cold water and warm it up in the pot (as kuzu instructions suggest) before mixing it with other ingredients for baking?
