  • Why are tofu scramble recipes so terrible? Everybody has one and they're all crumbly and dry and weird. I haven't been vegan so long that I have forgotten what eggs are like! Check out my technique for a tofu scramble with the perfect eggy taste and texture, using soft tofu and black salt.

    1 block Soft Tofu
    1 tsp garlic powder or granules
    1 tsp onion powder or granules
    1 pinch turmeric powder
    2 Tbsp nutritional yeast
    Black Salt to taste
    Salt & Pepper to taste

    Only recently watched Dominion and knew I could never be the the person I was. Giving up meat and dairy in this day and age is so easy with the alternatives available but eggs were a stumbling block for me. I've tried Tofu in the past with disappointment. Waited a week for the black salt to arrive. With hand on heart that was the best scramble ever! I will never crave or miss an egg again as long as I live. Thank you bro.

      This is awesome. I reached the comments hoping to read this. I am only missing one quick vegan meal to meet my macros and give up entirely on tuna (which is the only meat source I consume). To make tofu taste good it takes at least 20 min prep time for a nice flavored meal. I need something quick and easy and tasting good if I can make this to taste like eggs that will be more than enough to fully transition from pescaterian to vegan. This video plus your comment left me enthusiastic!

      @@josepedrobarbosa don't forget your tumeric and crushed garlic. I like a bit of oregano and a little bit of veg stock cube too! All that being said you really do need your B12 and I've reached a new philosophy; if you can't catch it, kill it and eat it then it states in the bible Proverbs 15;17 Better a dinner of herbs where love is than a stalled ox and hatred therewith. If however you can find a local farmer that has chickens and you can see for yourself where your eggs come from and what happens to them I wouldn't want anyone to go without nutrients. I couldn't eat meat again if you paid me but you really do have to make sure your getting the right kind of supplements like B12 and your proteins, nuts, lentils, chickpeas etc. It's great you've started your journey just make sure you have a good balance and get everything you need 👍

      @@annsmith1116 I try my best. I created two meals that are quick and easy but Include all the aminoacids I need. Lunch being 250g of Seitan with 160g of rice and a lot of black beans. Dinner 200g of Tofu eggs, 180g of rice and of course all of this with a lot of vegetables or legumes. I Take b12 and Omega. I know a lot of people don't think wonders of eating the same stuff everyday, but I've been doing it for years now with Seitan, I just missed that wonderful vegan dinner (which I now have). My blood tests come out always perfect because I do try to include everything my body needs in those two meals. Throughout the rest of the day I eat a decent amount of fruit and vegan protein shakes xp I feel better then ever compared to when I was bulking on a meat diet. Constantly getting sick and faling asleep in the middle of the day.

    You are a genius! As a 65 year old now with mild heart disease, I went vegan (never thought I would, ever) anyway, this is absolutely the best tasting egg substitute on the web. I tried dozens and you're correct they're all bad. This recipe/technique was EXCELLENT, the black salt was KEY!. I added some chopped cilantro as a topping...and paired it with wheat pancakes from Engine 2.
    Thanks so much, as this makes my conversion to vegan eating rewarding and delicious. Many, many thanks.

      @@TrashPandaVegan Hi. I can't find the Black Salt in my country and here Amazon is not a thing. What is the closest replacement for the Black Salt? I find the Himalayan Pink Salt. Would it be the same if I use it with black pepper? Thank you so much!

      @@ahiroshi93 Hi! I've never worked with substitutes, but the Himalayan Pink Salt seems to be recommended. I imagine Hawaiian Black Lava Salt would be even harder for you to get, but that might help deliver the eggy flavor.
      Either way, this recipe is great even without the black salt / kala namak, you just won't get as much of an authentically eggy (sulfuric) taste.

      Alternatively just crack open a couple of eggs and scramble in butter. It has a really good egg flavour

    As an non-vegan who likes to incorporate vegan things here and there, this was hands down the most convincing vegan thing I’ve ever made. I am now also able to make ‘eggs’ for a person who has a sensitivity to eggs. Thank you for this! I’m amazed at how the flavors hid all traces of tofu taste.

    Yesterday I bought tofu because it was on sale at Kroger.I usually prefer firm tofu but they only had soft tofu left.I am glad they only had soft tofu left because I would have gotten firm tofu if they had it.This recipe calls for soft tofu,which I have.Yea!

    WoW 😲😲 I Love this, I love eggs, but since I have stop eating eggs and have changed my way of eating, and moved on to Vegan I think 🤔 I did the best thing, I noticed you eat much more healthier etcétera. Am going to try this recipe the scrambled eggs.       Definitely try it out! I was never satisfied with firm tofu for this - it was always more of a crumble than a scramble.

    Thank you for nuking the syrup and butter together! My mom used to do this (as do I now). No cold lumps of butter, or room temp maple syrup, to cool down the waffles.
    I also sometimes add some frozen Maine Wild Blueberries (Wyman’s) to the syrup before nuking. It brings the waffles up a notch.

    Going to definitely give this ago. Not used soft tofu before, I normally find myself using extra firm or silken in my cooking. I've made scrambles before, but using Just Egg, and while I enjoy it, it kinda gets expensive...lol.

    great job! i'll have to look for the soft tofu i've never seen it. some stores carry silken but that turned out to be too soft

      Yeah, silken doesn't seem like the right texture for this. I've mainly only used silken for creamy sauces. If you have any international or Asian grocers around, that's where I'd look first for the Soft.

    Tofu scramble is my go-to meal. I probably eat it 4-5 times a week! Thanks for this-I’m going to try with the soft tofu. Have you ever used the silken tofu for eggs? Probably too runny. Great video!

    personally not a fan of black salt, but this definitely seems better than any other "vegan egg" recipe i've ever seen

      Yep, black salt is fairly divisive and I leave it off for my housemates. It's still fantastic without it.

    Is soft tofu the same as silken tofu? I can only find silken or regular tofu here in Australia but no soft tofu :-(

      Unfortunately it isn't the same. Generally I see the silken tofu in shelf stable packs, and soft tofu is packaged like a normal firm tofu. I've never tried this scramble recipe with silken, but it's definitely worth a shot. I'd be interested to see how it turns out if you try it!

      Nope, it's just for flavor. You can substitute some mushroom seasoning or a bit of Marmite/Vegemite, or nothing at all.

      Silken tofu is different - you can still use this recipe but the end product will not be the right texture (probably more watery). We mostly use silken tofu to make sauces - it makes a great Ranch dressing!

    You'll never be able to make a perfect vegan egg scramble this way. For anyone who wants to actually try to make a perfect vegan egg scramble, I would suggest mixing a highly soluble protein powder (like good clear pea protein isolate) with coconut oil and an emulsifier (like soy lecithin) to bind them. A pinch of black salt is fine for the hint of sulfur, but for the yellow color I would suggest to not use turmeric, but to instead use marigold flower powder, as its rich in the yellow and dark orange pigments that give egg yolks their color and flavor (lutein and zeaxanthin). Some nutritional yeast in addition would also be fine for more of the savory glutamate taste, but not too much.
    If you try this you'll be blown away at how similar it is to actual egg.

      Tofu doesn't have any real flavor on its own, which makes it a super versatile base for a lot of recipes, but for something like eggs you need some umami flavor. I like garlic and onion (even when I ate regular eggs!). We've also had good results using Marmite/Vegemite and Mushroom Seasoning. I could also see trying tomato sauce with this - it's really up to you and your preferences though.

    Why do vegans use nutritional yeast in most of their recipes?

      Mainly it provides a nice cheesy umami flavor. It's also good for you though - it contains a lot of Vitamin B12, which most people need more of, but vegans specifically need it because we don't eat the animals that eat the bacteria that creates B12.

    Why obsessed on making tofu as fake meat? Tofu isn’t artificial meat. Appreciate the characters of tofu as what it is!

      I love tofu in all forms! The most common way I make it is with a simple soy sauce and sesame oil marinade, cubed and air fried for about 12 minutes. But that doesn't mean I won't experiment to find new fun ways to use it even more.

It’s just cringe worthy to me observing most western vegan youtubers who didn’t grow up eating tofu and just recently got exposed to tofu obsessing with making tofu look and taste like meat and making people think that tofu is vegan food or artificial meat. Our ancestors created tofu to be consumed for everyone. It’s not vegan food, and you don’t have to be vegan to eat tofu. Tofu is universal.
