You kind of need the grease and flavour left behind by the meatballs to make the sauce taste good. Also it's lingonberry. A lot less sweet, and much more acidity than strawberries.
Cranberries would probably be a closer substitute if you can’t get lingonberries. Definitely closer than strawberries anyways.
@@FizzyCape Yeah, if you're considering the tartness. I wouldn't say it's all that close, but definitely closer in its flavour profile. It'll add similar things to a dish.

damn it hurt me when he discarded the pan with all the greasy goodness from the meatballs, if you watch any cooking video for steak etc they always use the pan with the juices and stuff to cook the sauce cuz its where all the flavor is at

as a Swedish person, I promise lingonberry (also known as cowberry) jam would be way better than strawberry. Strawberry is too sweet, not acidic enough and missing the important tang that comes with lingon.
lingonberry jam with liver casserole is one of the best combinations you can have with lingonberry jam.
As an Aussie who occasionally goes to browse the Ikea food market, I support your words on lingonberry jam. I don't even like strawberry jam now (part of that is middle-aged stomach issues causing my sweet tooth to reduce drastically), but lingon is still a good goop, alongside cranberry.

When you put the strawberry jam on the plate I died inside, it's supposed to be lingonberries.

as a swede, you did pretty decent considering what pewds did in his video lmao.
so the thing that you replaced with strawberry jam was actually lingonberry jam, it has a more acidic flavor than strawberry jam and compliments the dish better :)
and personally i would make the meatballs smaller, that way they get done easier in the pan without burning them, plus they are a better size for eating lol
you are also supposed to keep all the greese and meat juices in the pan, thereafter you add your cream and your stock to the pan and deglaze it to make a sauce (this is where pewds used soy sauce too, its optional if you want it or not)
lastly it is pretty common to eat meatballs like this with some lightly pickled cucumber :)
but again i must say you did pretty good!
To be fair. I don't discredit him for removing the pan. His had way to much fat. I'm assuming he used a higher fat content ground beef than pewds did.

The Jam Pewdiepie uses is a Lingonberry Jam, every swedish meatballs I've had has it on the side.

Definitely uses lingonberry. Also if you’re in America and happen to have a Ralph’s or Albertsons they usually have lingonberry. Seen it at smiths (Kroger) as well but rarely there.

Making brown sauce with cream and soy is kind of strange. For those who don't know, the traditional way is to make a roux and brown it. Then add slowly add stock to it mixing it free of lumps during the process.
Also, cranberry jam is not what is traditionally used. Lingonberries are what is used with meatballs in Sweden. Cranberryjam is an acceptable substitute, though it has a somewhat different taste.
Nah it should be soy sauce its nicer than you'd think but like preferably stock too.

It's not espagnole, it's swedish "brunsås" (brown sauce in Swedish). You may skip the soy (I prefer to add a dash of worceshsaodsadosdehiei sauce instead) but the cream should be there.
Pewds has been a Japanofile for a while.
He probably got it from Nippon.
Soysauce + Cream, Soysauce + Butter, etc. is common and the combination is actually good, bar you fucked up and used too much of either or.
As a Swede, I got anxiety when you whipped out the strawberry jam instead of lingon😂 but was it actually good with the strawberry?

They sell Lingonberries here in the grocery stores. The brand I got are much less tart than cranberries but very interesting. Good on a turkey sandwich.

i need to learn how to chop onions the way you do, that was amazing
its the normal chefs way. you just cut it vertically but not all the way through to the back so the slices stay attached, then you cut horizontally so it form a grid pattern. rotate 90 degrees and cut vertically again and you should end up with a bunch of roughly even sized onion cubes.
Just make sure your knife is super sharp and you'll be able to do it no problem.

@@ONI_002 the horizontal cuts isn't really necessary if you angle the vertical cuts to follow the curve of the onion (well I guess the last few cuts down the sides are almost horizontal but you probably get what I mean).

I think the jar you didn't know is probably lingon jam. I know from my Aussie experience that outside Scandinavia, it is probably only available in Ikea food markets. Luckily, in my experience, it is a product they always have (unlike the seaweed balls i.e. vegan roe). From what I can tell, lingon jam is usually served with the meatballs the same way apple sauce is served with pork, cranberry sauce with turkey, and sweet&sour meat dishes.

When your pan has a bottom crust you can use stock or wine to extract it from the pan and incorporate the flavour into the sauce.

Lingonberry is analogous to cranberry. It's sour. But good. And grows well in my local woods. Also we aren't known for our cuisine. Like Scandi food its alright. But It's mostly pickled fish and mashed turnips.
Then again your description at the end reminded me of my grandmas cooking. One of my favorite partyfoods back then was "Porterstek". Where you cook pork with porter beer. Making a delicious gravy. And you serve it with potatoes, blackcurrant jelly and pickles. She also made these moose meatballs with blue cheese filling once. That was great.

You're supposed to use the leftover grease from the meatballs to enhance the sauce. In Sweden we call it "brown sauce" and it's so ubiquitous in Sweden that I was kind of shocked to hear that it's not recognised as a _real_ sauce.

1. to not to burn meat use olive oil and lower temp. add more bread crumbs to make meatballs round where they fry
2. deglazing pan after meatballs with cream makes a taste to the sauce
3. make them smaller

Man cream into the used pan is to get the meat flavor on the sauce, nothing bad about a little grease sometimes.
It's cringe watching "healthy" people starting to cook without understanding how to cook throwing away things that are key factors in recipes like this one. Fat is never bad in cooking, it's literally needed for flavor

and also, too much grease tastes gross, you need just the right amount (there was a lot more oil in his pan than in the original)
The greasy/burnt part on the bottom of the pan is called fond - it is what makes tasty gravies/soups. On a separate note - I really enjoy your videos.

recently found your channel, and since it's some really cool content and youre growing/learning/willing to improve, heres some notes from what I like/dont about your content:
--reusing gifs and gags: the constant reusing of gifs like beiber and zucc, as well as constantly reusing bits like talking about your pp gets increidlby old and stale incredibly fast. the gifs etc are funny but watching the same thing over and over is lame. Please try to get a bit more variety
--lying about how good result is: its very possibly you are truthful, and simply love the food you make, but it seems that with every single cooking channel, notably kays cooking, the chef always always always goes "wow this food is delicious! god like! so amazing! i love it! make it yourselves!" - just please make sure youre being honest. no one will hate you if you go "oh its ok. kinda mid and I burnt it a bit"
--For me I think the main appeal of your channel/content is that it's just a regular guy trying to copy the complex interesting cooking pros do, and making do with simple tools, and making mistakes etc. So please don't mimic the pros, especially with the gordon style video where its close fast shots of food and the other stereotypical stuff. find and maintain your own style
--stay humble: with the bit where fans roast you on ig, I found it funny when you pretended you were offended by it. But you seem to have transformed that bit to where now instead of being roasted it's more just an add for your insta. to me this is you getting a big ego and not accepting to have fun with a joke
--not overedited: many popular channels have obnoxious subtitles and constant music and 10 sfx going off at once in an attempt to maintain engagement. Please don't do that. I think it massively devalues your content and is basically just going "My content isnt interesting as is so I'll constantly "jingle keys" to make up for it, and get the viewers to keep watching to the end". Like in this vid for me youre using too much music and sfx and zoom shots etc - but I think a more natural chiller vibe works better for your relatable chill content

missing nutmeg and all spice in the meatballs. that's like the essential spices that makes it a swedish meatball. also the gravy made with cream and soy sauce is weird. instead of getting rid of the fat and fond, you're supposed to add flour and make a roux then add stock to make the gravy. the jam was lingonberry but cranberry also works.

The “butter” he used is actually salted butter mixed with vegetable oils.
In Denmark it’s called “spreadable” (smørbar)

i prefer using eggs instead of cream, just think the meatballs have better taste that way and better binding source, and i boil my meatballs before i fry them in the pan :) and in the sauce i also use some shallots, meat broth and some starch to thiccen tha sauce a bit xD oh and some tomatoe purée but only a little!!! oh and instead of lingonberry jam, i use sweet pickled cucumber... such a good match to all that salty goodness^^
