Make & Freeze Trail Food Using Egg Bite Molds

  • We try out our new egg bite molds with a great recipe for egg bites and we test how well they will freeze for use at a later date.
    Recipe: Egg Bites
    Distribute evenly across 7 egg bite mold cups 1/4 cup veggies/meat combo and a pinch of cheese in each. Fill cups to the top with the egg mixture:
    4 eggs
    1/3 cup plain Greek yogurt
    Salt and pepper to taste
    Beat together until thoroughly mixed.
    Cover mold with foil and pinch into place to prevent steam condensation from gathering on the top of the egg mixture. Place 1 1/2 cups water in an Instant pot. Place a rack or trivet in the bottom of the pot and place the mold on it. Close the pot and select "pressure cook" and set timer for 9 minutes. Allow to vent naturally for at least 10 minutes or longer.

    I have a carton of eggs and a little bit of Greek yoghurt that want using up, now I know what I'll be making. A little bit of diced smoked ham added in, and you'd have a nice light quiche lorraine

    Pam: If you put to much effort into preparing meals you miss the opportunity to truly enjoy your surroundings. I have eaten egg bites from the freezer case at the store, but I no longer do so as they are little salt bombs. I would like to make my own. Also you could pair the egg bites, a small salad and a piece of crusty bread for a great brunch or quick lunch. I am glad you showed us how to make our own egg bites.

    I make similar egg bites in muffin tins but will try the IP version you’ve shared! I’m interested in the yogurt but usually add cream to my egg mixture. The possibilities and combinations are truly endless. One of my husband’s favorites is a texmex omelette with sautéed onion, bell pepper, pickled jalapeño, sausage( i use chorizo for him but country for me), and cheddar jack cheese. Top it with a little green tomatillo salsa and it’s delicious! I also freeze mine 2 at a time for quick and easy grab n go breakfasts on work days!

    I have done the egg bites with Salmon.Also threw in some Spinach. It was good. Didn't come out too well with oysters though. One of these days I am going to try with Egg whites. Love my Insta Pot!

    Hello, i think this would work as a set it and forget it idea! I do not own an IP so i do my egg bites in the oven using a muffin tin. Works fantastic! Egg bites are such a great travel food and a great snack for kids and adults. Mexican egg bites are a favourite of mine! I also chop them up and make egg tacos, yummy.     I have made egg bites using small muffin tins and the oven for at least 7 years. They always turned out well but when it is hot out, I don't want to turn on my oven since I don't have air conditioning. This is perfect, I love my instant pot and how things cook in it. Just ordered the silicone cups. I hope you will share some additional recipes using them. Meatballs would be a great one. As a single person, it would be nice to make a good batch of them and then have them in the freezer to use for later.

    If space and budget are limited you can make these in muffin tins and freeze in zipper bags or upcyced bread bags. This was before silicone bakeware and instant pots were all the rage.😊

    Exciting way to get a measured amt of protein and fiber in the mornings. Will send some of these to my Mom (95) to use maybe in her microwave.. in her assisted care facility. Want to try the egg bites for me too, thank you for a new twist for our girls eggs!

      I used to make all my mother's meals and she had at least a month's supply of a variety of soups, casseroles and stews stored in the freezer. She would have loved these bites. She was blind from macular D and lived independently until dementia took that away. But she was able to use her microwave to heat her food when she was still at home and early on in the assisted living facility.

    Biscuits: use heavy cream and self-rising flour. Combine them to get the texture you want. Baked in the oven, they're light, soft, and tasty. I haven't tried them any other way, but you can't find a simpler recipe if you're wanting to experiment.
    (I bought powdered cream from one of those places that sell shelf-stable foods, but I haven't gotten around to trying it yet. But it may be even simpler.)

    This is perfect timing. I was buying egg bites at Scooters at a little over $5 for 2 that are about have the size of the ones you just made. So I was buying them maybe 2 times a weekend. I got to thinking there must be a more economical way to have these so last week I ordered the exact same molds from Amazon. I didn’t even try them yet and Boom, you made a video. Thank you sooo much. Perfect timing and I never even thought of using the yogurt. You are the best!!!!

    Great video! I am ordering these molds now. I am always looking for new breakfast ideas as we are a breakfast loving family (sorry, Jim). My grandkids love banana bread and I'm thinking these might work great for that.

    I have just ordered a set and I think when I try it I'll use the plastic cover and then wrap the whole thing in foil to keep the moisture out. Here's to experimenting!

    The 2 ingredient biscuits works well for freezing (after baking is the way I freeze them), self rising flour and sour cream.

    I use cottage cheese in many of egg dishes, such as quiche and egg bites. I was baking them in the oven in muffin tins last fall and winter, but it's way too hot to turn on the oven right now. I pull out my vitamix and grind up a container of full fat cottage cheese until it's smooth. Then a dozen eggs go in along with salt and pepper. I can easily pour the mixture into the muffin tins. My husband loved them and would eat a weeks worth in a few days. I just got tired of making them so I quit. Now I'll have to try again using your method. I'm sure he'll love having them again.
    Can you give us the pumpkin bites recipe?

    I enjoy the easy life when traveling in our RV too! Thank you for this idea to make camping easier, I’ve made egg bites, meat bites, and because I’m keto “fat bombs” in these type molds.

    These sound great. I sometimes get the sous vide egg bites from Costco. But I like the idea of customizing and making my own. I just got the Carey e-canner/multicooker. Do you think they can be cooked in that? Or - I'd love to see you do these in an air fryer.

    I bought that same instant pot on your recommendations in 2022 when u showed it was onsale..used it not a lot but mostly for canning small batches..I noticed the last time I tried to use it the right side back of touch controls don't work.. they act like they work n light up but the function don't work 😢

    I made english baked eggs with cream on top, they were really good fresh baked... but freezing them i didn't care for the texture. Same principle here except, you don't whiz your eggs...

      Some people have said, they bake them in muffin tins. If you have the mold you could just use oven.
      I dont have these mold. Think I will just use my muffin tins. Wanting to start freezing food. Good luck
