For the bao buns dough recipe
- 250ml (1 cup) warm water
- 3 Tbsp sugar
- 1 1/2 tsp active dried yeast,
- 2 Tbsp milk powder,
- 400g all-purpose flour
- 2 Tbsp oil
- 1 1/2 tsp baking powder,
Instructions:
For the dough
dissolve sugar into warm water and mix in dried active yeast and set aside until foamy.
- Add the mixture into the flour, combine and knead for 15-20 minutes.
- Set the dough ball aside, covered until double in size about 1 1/2 hours
- when you are ready to use the dough, punch down the dough
⁃ Form the ball of dough into a roll, cut into two, this recipe makes 12 large buns
- rest for other 15 mins
⁃ Place buns into the (bamboo) steamer rest for 15 mins,
Steam:
-start with cold water on high fire
-when you see steam comes out, set on medium fire for 15 minutes,
- leave the lid on for 5 minutes , after turning off fire.

Thank you Chef Melvin!! Your bao buns look fluffy and delicious. I made some char sui the other day…I will use your recipe to make “open” char sui bao buns!! I like the added milk powder and baking powder…I have a feeling that this will be my base recipe for liu sha bao and dow sha bao too. Many, many good wishes from an Asian home cook living in Ottawa, Canada.❤

Can I freeze these buns? If yes, cooked or uncooked? When taking them out of the freezer, do I just let them thaw out? How long to thaw, or do I have to re-steam them again?

1/2 of cup of water and the rest of the measurements are on the bottom left corner
You can see that it's almost half way between the 200ml and the 300ml so I would say a cup. Make sure the water is warm
@MelvinInVegas. Tips: If you use SAF Instant yeast, no need to proof the yeast in water. If you mix the shaggy dough with a Danish whisk, it will come together faster, easier and with less effort.
