    Taiwanese Gua Bao is also known as steamed pork bun hamburgers. I grew up eating steamed buns, and this is insanely delicious. An authentic Taiwanese Gua Bao consists of a few components: The tender braised pork belly and the fluffy steamed bun are the foundation. Based on that, we will serve it with pickles and peanut powder to elevate the flavor.
    INGREDIENTS:
    For the pork belly
    900g (2 lb) of skin-on pork belly, sliced into 2/3 inch thick slaps
    1/3 cup of roughly chopped shallot
    3 tbsp of roughly diced garlic
    1 tbsp of minced ginger
    1 star anise (Amazon Link - geni.us/star-a...)
    1/2 tsp of five-spice powder (Amazon Link - geni.us/five-s...)
    1/2 tsp of white pepper (Amazon Link - geni.us/white-...)
    1 small stick of cinnamon (Amazon Link - geni.us/cinamo...)
    2 pieces of bay leave (Amazon Link - geni.us/bay-le...)
    2.5 tbsp of sugar (Amazon Link - geni.us/granul...)
    1/4 cup of Chinese cooking wine (Amazon Link - geni.us/Shao-x...)
    1/4 cup of soy sauce (Amazon Link - geni.us/light-...)
    1 tbsp of dark soy sauce (Amazon Link - geni.us/dark-s...)
    600g (2.5 cups) of water
    For the mustard green
    2-3 tbsp of pork belly fat from the braising liquid
    226g (8 oz) of pickled mustard green, diced
    For the peanut powder
    1/3 cup of roasted peanut
    3 tbsp of sugar
    For the steamed lotus bun (makes 12 buns)
    400g (2.5 cups) of all-purpose flour
    25g (2 tbsp ) of sugar
    210g (3/4 cups + 2 tbsp) of lukewarm water
    6g (2 tsp) of yeast
    Others for garnish
    Diced cilantro
    Diced chili

    I recently made the folded "sandwich" bao for the first time and these steamed buns are delicious! They are soft, airy and have a delicious flavor by themselves, while never overpowering any fillings you may choose to add. A small container of commercial chicken salad and a jar of my homemade pickles made a great lunch on the road. My only regret was that my bao were tiny and will be rectified when I get off the road and make my first try of this full recipe! Thank you for keeping me fat and happy, Ms. Mandy!

    When I first saw those chili on the bun, I was like, "no, we don't use carrots in Taiwan"...
    Then you said chilis and I was hooked. Perfect recipe. Just like we made in Taiwan.

    My Mentor, who taught me how to cook Chinese food, taught me all about bao. We fed hundreds of people with bao holding pork belly. It was fun. I don't even know if I got paid for that. Oh well, who cares. I got at least as much out of the deal as he did. Thanks to him, I can make a lot of Chinese-American dishes. I have no idea if this translates to making real Chinese food. Probably not.
    I love your channel. It's very relaxing to watch.

      If you are in the US, most of the mainstream grocery stores don’t carry pork belly, you can find pork belly at Asian markets or ethnic butcher shops.

    The bun recipe sounds really good, did you ever tried it with bread flour instead. I noticed that AP flour has a crumbly bread texture compared to a little chewy bread texture with the bread flour, something to consider.

    I often make Bao Buns but mine are a lot thicker and fluffyer than yours. I like my version a little bit more and the recipe including milk. But next time i‘ll made your pork. I always made red braised pork belly. ☺️

    You should still wait with instant yeast in my opinion, it ensures it has multiplied enough to properly ferment the flour. Thats just my experience though.

    These are deadly good, except for the cilantro, but that's a personal thing. Garnish to taste and enjoy. My suggestion is diced radish for a bit of crunch and a fried egg.

    Are there different varieties of pickled mustard greens? I used to go to a mom-and-pop restaurant (that had two menus- one in English and the other with authentic foods in Chinese) and experiment with the authentic dishes. One time, I tried a dish with Beef stomach and pickled mustard green and I found it intensely bitter. I wonder if that's a traditional flavor profile for dishes like that due to spices or cooking style or if the mustard greens were really just that potent.

      pickled mustard green is not bitter but if it is fresh mustard green, it may have a slight bitter after taste.

    A good dutch oven should work as well as the clay pot.

      Please always use grams because that is acurated. The cup measurement is only for reference as everybody measures differently. It could be tightly packed or losely packed.
