My thoughts and observations:
- for the blooming espresso you need to grind finer
- by using the lever to stop the flow after your 3 seconds, you've opened the solenoid valve and sucked most of the water out of the puck (visually confirmed by the water being discharged from the dump valve into the drip tray when you closed the lever.
- that said suction can really dislodge the puck also and possibly did here as evidenced by the large amount of channeling that occured with your shot.
- adjust your flow control paddle (if it's not already adjusted) such that you can completely shut the flow to the puck using the paddle, leaving the pump on (lever up in the on position).
- suggest you try the Rao (and John) blooming method:
- grind finer
- start the flow wide open (lever up/on and paddle open).
- using the paddle only, stop the flow when the pressure (at the puck) reaches 4 bar
- wait 30 seconds (drops should drip from the bottom of the PF showing complete saturation of the puck during this bloom phase.
- resume the flow by opening the paddle and adjust to 8-9 bar pressure for the shot. If you can't reach that pressure and normal shot time, then you didn't grind fine enough.
Try something:
- start you're shot as you did here and this time when you shut the machine after the 3 seconds, remove the PF and knock out the puck. Is it wet completely through and was there water in the PF still ?
