- In this video I show you how to make four absolutely amazing, but easy, basque country style tapas called pintxos / pinchos.
Not only will you get to see how to bring together four bite size snacks to serve at your next party, but I will be showcasing some other cooking techniques along the way, such as an awesome marinade for your chicken, how to make caramelised onions, how to make apple & pear sauce, as well as show you what to do with my awesome bravas sauce (besides serve it on potatoes).

Thannk you! It was a very I spent more time on than usual (2 days to film and several days to edit), so I am rather pleased how both the food and the video turned out! The chicken is my favourite (as also seems to be the favourite of most people who have commented) and I will use that recipe again for a main course meal for sure!

What I'm learning about tapas and pinxos is that there's a size and formula that such as these amazing pintxos are all served on a slice of bread but from there you can be creative and combine flavours that will compliment each other? Your selection was great Jim especially the fried chicken with padron peppers, lovely
Absolutely yes! In my opinion pintxos are one of the best tapas for that reason, and if you go to any pintxo bar in the basque country, especially Bilbao, they will have a massive range and usually one or two that is like their signature recipe. They are so fun to make and play around with!
Basque will also tell you pinxtos and tapas are different. And get offended if you say they're not.

Except pinxtos isn't tapas. Pinxtos is the basque version and often larger. They hate it when you call their version tapas.

Love these tapas! Such an easy and fun ideas! They look so easy to make and would taste so good! I want to eat them all , i really don’t know which one is my favorite as each of them has such unique flavour! 😋😋
The wife and I were the same, and kept going back and forth which we liked the best. My wife loved the goats cheese, and the Jamón with apple sauce the best, and I probably liked the chicken and the bacon the most....but they were all delicious!

Everything looks great, but those slow cooked caramelized onions with goats cheese...YUM! So true how cooking the onions slowly makes them so much tastier! Really enjoyed watching you make the last dish's marinade. The spices and ingredients looks so delicious! And the pepper on top was perfect. The final plate looked gorgeous and super DELICIOUS! Really beautiful video with amazing food! 😊🌷🌼

onions can take a long time before you get them to that color! ;) haha I will have to make some bravas soon! I really enjoy them!
I hope to get a little fryer as you have, it makes life so much easier!
Haha - when we were eating we kept going back and forth, and saying the goats cheese was best, then the jamón, then the chicken. But for me the chicken was REALLY good, and I will use that recipe again for some bigger pieces of chicken as it comes out so tender and full of flavour!

Hahaha No, padrón peppers are more like a small bell pepper than anything - every now and then you will get one that is a bit spicy, but they are not like chillies 😉
I was told their food is complicated. Not wrong. I'm a tiny bit basque but I will stick to piperade 🤣
