yes. the 3% is on alipay's side. Whether its youtrip/trust bank/wise transfer, there is still 3% above 200rmb. some resorted to splitting the final sum to avoid 3%.

Should my spending on the Selected category goes beyond $555 per month for the $2,000 spend tier, how would those extra spending be considered? For simplicity, assuming I spent all $,2000 on dining for 3 months. Would the extra $1,445 ($2,000 - $555) be considered as Other spends? Or would it be "wasted" in the Selected category and get me just $250 cashback? Thanks!
I worked out the numbers to optimise the spending for the cashback % I mentioned. Max out the bonus category spend with the following amounts and all other expenses can be anything just to hit the min monthly spend.

I hope I'm not interpreting the vid content wrongly.
the base 3.33% cashback for the simplygo transaction is already included in the base cashback line. Hence, the cap for the month, is $33.33 because in a quarter the cashback cap is $100! FYI, additional cashback merchants cap is also $100 / statement month. Refer to T&Cs
gotta agree with you @animacroix. if the 1k is all on bonus merchant categories (e.g. cold storage/simplygo/shopee/macds/grab) then there's the potential to get 8.33% for all spendings. and for those who only spend 500 a month, all on bonus merchant categories, it's clearly better too (also 8.33%). so actually UOB One is still the clear winner if one is able to spend just on the bonus merchant categories.

Maybe not because insurance premiums don’t count towards that min monthly spend :( anw double check for UOB One too, from my understanding insurance is excluded and cannot earn cashback.
