+Hari Roshan i just made it with one chilli, I thought I could have kept some of the seeds in but the combination of the smokey pepper and sweet tomatoes works so nicely together. If you can, add the pomegranate seeds, it adds an extra fresh kick and crunch

Loved this video - the way you explained what to look for in the lesser used (by me) ingredients is really helpful. Never really been sure how to use plantain - see them in the supermarket and walk past them - same with pomegranates - will definitely try this.

First off, I LIKE this guy! Beyond that, it's exciting to see someone using Caribbean ingredients in Mexican dishes. Here in Brooklyn, where we've had a variety of Caribbean populations (Nuyoricans, Yardies, Dominicans, Haitians, etc.) for generations, and have recently seen a huge growth in the Mexican population, we rarely see that kind of fusion. I'm not saying that we should water down any individual cuisine, but if maduros taste great in a burrito, why not go for it? Nobody here minds Korean tacos, why not make Jamaican burritos?! I'm looking forward to seeing more from this fellow.

OMG! We have plaintains here in Brazil as well! They very commonly used in dishes in the northeast but I'm from the southeast and we don't have the habbit of using them at all. I see them being sold in the market but never tried. Wouldn't know how to ook it. Now I super feel like trying this recipe! Never seen the chilli thing though...

I know sometimes when people cook Mexican food they don't mean it to be really Mexican but their own version. I was expecting that from this, but I was truly surprised to see this is actual food we eat in Mexico regularly. I just never thought to put it all together like this. I gotta try it now.
