  • If you haven’t got a failsafe soup recipe in your arsenal than look no further than this tasty offering from Vegetarian cook Anna Jones. From one batch of sweet potato and squash soup she creates three different serving suggestions that will see you through the week.     I think I've made this recipe about 3 or 4 times now.. just want to say THANKS! As a vegan and a poor student, this is just the easiest and greatest way to get good food! And love the fact that it's like 3 dishes in one.

    Great video - thank you! I also learned a trick this summer that makes all my soups and stews sooo much better tasting. Here it is: get your oil medium to low hot and throw all the herbs and spices is there to carefully toast them a little. I love to squirt some garlic paste in it too at this point. Very important not to burn it, otherwise it goes bitter. But once you can smell the wonderful aromas it's time to throw in the chopped onions and carrots and follow the recipe on. Flavours - amplified!

      I actually cook a lot, but I am watching there videos more for inspiration than to follow them step by step. Actually, I do not think I have ever followed a recipe exactly, I am always twitching things to my preferences, combining several recipes together, or changing a thing or two because other people (grandma doesn't want too spicy, mom doesn't eat about a ton of ingredients, my roommate doesn't eat tomatoes...) :)
      I like these soups, though, perhaps I try something similar, it would be my about 5th variant of a pumpkin soup. There's never enough of pumpkin soups :)

      I am wondering if she left the outside skin on the squash? I usually peel that off but it's time consuming. I am hopeful that I can leave it on!

      My ex-husband and I really liked to cook together (I messed up we're still best friends). My parents did the same - try it! They were the ultimate romantics, used to dance around in the kitchen, long long ago. Great food resulted. There's been a lot of pressure on Jaimie Oliver to sponsor or cook vegetarian food -- 4 hrs on in 2019 -- you probably won't get this response -- his cook book is amazing.

    Made this tonight- a little bit adjusted for what I had in the pantry & garden- powdered cumin instead of seeds, fresh Rosemary instead of dill seeds, left out the spinach. Blended & topped with cilantro.

    Looks YUMMY! I love vegetables too. I don't eat them because they're supposed to be good for you, I just love them. We go to this place on Saturday for dinner and I get spaghetti with garlic and oil and tons of herbs and on the side a huge platter of broccoli with garlic and oil and it's DEEP green and al dente! YUM! Your soup looks delicious. I'll try it!

    I currently have this cooking away in my big soup pot! Very exciting. I might go a bit crazy and add the cannellini beans at the end and then blend everything together. Hopefully will be nice and creamy.

    Everyone is wondering about the peel on the butternut squash and wondering if it’s OK to eat it. I just watched Jamie Oliver and his sidekick Gennaro cook three different dishes out of butternut squash and they used the peel every time. Jamie said it is very sweet and it is a shame to waste it. So go for it, use the peel! What he was doing was roasting the squash for an hour or more in the oven at 180°, whole, with seeds, peel and all. He did remove the seeds for the recipes but said to roast them and eat them as well.

    I am always thankful whenever you show a vegan recipe here.
    This one is really healthy, cheap, easy to vary, good to store, animal cruelty-free and delicious! Just go for diery-free with it and it's perfect.
    Low budget suggestion: use potatoes and carrots as main ingredients.

    I always pick up every piece of tiny potatoes in my clam chowder soup to discard it to save a few calories :)
    I also like Tom Yam soup with lots of veggie in it, the lemon grass perfumed the soup

    After watching this video i went straight to the kitchen and made some soup! Soo delicious - just love it and the taste is much different to my usual vegetable soup (made it with sweet potato, lentils, broccoli and spinach). Thanks for sharing this recipe!     In Denmark, I wouldn't really say sweet potato is anyway near "affordable" I can get normal potatoes ten times cheaper. In my book, I wouldn't use a single second on which potato to choose from.

      same in germany. Sweet potatoes are not really cheap here too. But remember, that sweet potatoes are a lot more nutrious than normal potatoes and most of the times imported from Spain or United States. By the way the sweet potatoe is not a real potatoe. It's a completly different plant.

      Sweet potatoes have a completely different flavor than other potatoes. If they are that expensive in Europe, you should grow them your self. They are easy to grow.

    I have noticed most, if not all, chefs do the same...and so do I (I think that carrot peel blunts the brightness and sweetness of the carrot.)

    Oooh, I love making my own butternut squash soup but am going to try this version. Interesting that you didn't peal the squash! I always have assuming that I had to? Would defiantly speed things up if I could avoid it.

      You can make up veg stock from a stock cube.
