No Bake "Cheesecake" - 1950s Peach Jello Vintage Thanksgiving Recipe

- So Jell-O and me don't tend to get along very well... especially when it has other things in it. (Check out last years Thanksgiving Jell-O video...ugh.) BUT... this year I actually found something that turned out great! Even my husband loved it and asked for it for Thanksgiving in a sugar free format, which would probably be pretty easy to do.
Jell-O was all the rage in the 1950's and thankfully I didn't end up with one that was totally gross.
The only changes I'd make to this one is to use WAY LESS sugar... I love my desserts, but holy crap. The Jell-O itself has sugar in it, then you add more... honestly its pretty sweet. The other thing I'd do is try it in strawberry.
I think this one is going to be a contender for my Turkey day table.

I remember my mum making a lemon cheesecake back in the 70s. It seemed really easy to make. It had the digestive crust but the topping, I'm sure, was just lemon jelly and cream cheese. I remember her using cottage cheese, once, and having white bits showing because she hadn't blended it well. Definitely a lot less sugar.
I don't recall any of my family making anything close to these kind of desserts and it wasn't until I got married into a family who did that I realized just how many people made these recipes. I'm wondering if the lemon would have been a better choice than peach.com But yes. There needs to be a lot less sugar in there!
