The Ti' Punch is the national drink of the French Islands of Martinique. Distillers on the island save their very best rhum for their unaged spirit and the Ti' Punch is more commonly prepared with this blanc rhum. Undiluted and served at room temperature, the Ti’ Punch is simple to prepare yet complex with flavour.
For the unfamiliar the first sip may be daunting but the aromatics are undeniable. Each sip will uncover notes of grassy, vegetal, tropical fruit and fresh cane.

INGREDIENTS
- 60ml Rhum Agricole (2 oz)
- Teaspoon of Cane Syrup
- 6-10 drops of Lime Juice
METHOD
1. Combine the Rhum Agricole and syrup into the glass
2. Stir to combine
3. Squeeze lime juice into the glass
4. Garnish with spent lime piece

Hi Steve, had my first + wonderful Ti Punch a while ago in a cocktail bar on the island of Rügen in Germany with Clement or Trois Rivieres Blanc Rhum Agricole from Martinique @50% abv. Barkeeper opted for sugar cane syrup and added some orange zest to the mix on ice cubes. Very intense drink and whereas oftentimes ice threatens to water down your cocktail over time or just reduces the good stuff the ice actually helped as the Ti Punch due to the lack of "fillers" can take a lot and retain its integrity. Need to try this one at home soon. :-)

Hi I lived for a couple of month in Guadeloupe’Island near Martinique, traditionnaly we start by puting the juice of the lime (and we put the lime into the glass), then we add the sugar (or honey). Wiith a spoon we shake the two ingrédients to mix sugar and lime. Finally we add the rhum as much as we want 😉 anyway thanks for revisiting this amazing cocktail and I hope you’ll like this version !!

Come on Steve. You know you want to go there and try the bottle. This cocktail reminds me of a good whiskey with a couple of drops of water to open it up. Hmmm.... it sounds more tasty by the minute. Great job.
I like to squish the lime disk into the sugar before adding the rum. The essential oils from the lime are a nice addition. Aged or young rums both taste great! Great video as always, Steve!

Absolutely love this one, been drinking it all week. Using 50/50 Rhum JM & Havana Club 7y to get it a bit sweeter & about 20 drops of lime to balance. Cheers for the recommendation!

Cheers Steve, Check out making the drink with Saint James Rhum. a Rhum from Martinique! Thank you for the lessons. Try this punch. 2 Oz Saint James Aqricole Paille, juice of a whole lime, 1/2 Oz Dry Vermouth, tablespoon Luxardo ( I see it behind you), tablespoon of Grand Marnier, right next to it, 2 splashes Peychauds. Shaker full of ice, shake it up, and strained into a chilled Martini glass. We'll dedicate it to Dire Straits and call her the "Single-Handed Sailor" cocktail.

Basically, TI Punch is made with white rhum (50°-55°). You should try "LA BELLE CABRESSE" which is a rhum from French Guiana.

Ok. 1/2 way I pause and went and made one. YUM!!! Use the 9 drops and a dash of lime bitters along with the sugar. Really sounds like the Caparaina. As for the idea of the leave the bottle there is a recipe in 1888 Harry Johnson’’s new and improved bartender manual called Rock and Rye. The recipe is "Use a whiskey glass. This drink must be very carefully prepared , and care must be taken to procure the best Rock Candy syrup, and also the best of Rye Whiskey, as this drink is an effective remedy for sore throats, etc. In serving the Rock and Rye, put 1/2 table-spoon of Rock Candy syrup into the glass, place a spoon in it, and hand the bottle or Rye Whiskey to the customer, to help himself. "

I have mixed up a new cocktail that I call The Kimberly Ann. I thought had an interesting profile. I'm just not sure how to get it out there for the world to enjoy. Any suggestions? Would you like to try it @Steve? 2 oz spiced rum, 1 oz disaronno, 1 oz Triple Sec, 2 splashes orange bitters, 1/2 oz sweet and sour. Stir with ice, then strain into a glass over ice. Garnish with a single cherry.
Husk Distillery (of 'Ink Gin' fame) in NSW makes a beautiful Blanc Rhum Agricole! Highly recommend Steve

As I can see, this is something like demerara sugar or like this? If so it's actually centrifuged. Uncentrifuged sugars have far more molasses, examples are muscovado or suganut

The rhum used here in Martinique is mainly the Neisson white rhum.

To be able to pronounce "Vieux", try merging the "E" and the "U" together. In french is done with the throat, but I'm sure you will be able to get close enough :)
What is the tax rate for alcohol in Austraila? I guess it is more expensive then most countries?
$87 per litre of pure alcohol... ie 700ml bottle = 0.7L x $87 x 50% abv = $30.45 of tax

Hi Steve. Great show it would be great if you could explain what some of your ingredients are. I had to look up the difference between Rum and Rhum. Maybe it's a uk thing but it's not widely known here. That's the same for some of the other spirits you use. Keep up the good work.

I’m hoping someone could help me out years ago they used to serve a cocktail at my local that had 3/4 possibly 5 ingredients in a half pint glass when topped up with lemonade made a pint of something that tasted like a strawberry ice cream. 🙏🏻 help I’ve thought about this drink for years
Lol, we need a little more info to go by...
One my local used to make was called Strawberry Shortcake. A blend of fresh strawberries, amaretto, vodka and ice cream. It was bloody lush, it a go!

This is just the Martinque version of Caipirinha
Sort of, yeah!
I was going to say this, though I think the muddled lime in the caipirinha has a big effect because you get the earthiness and bitterness of the oil and pith of the rind, not just the tart juice of the flesh
