  • The French Caribbean island of Martinique is known for their funky, vegetal rum called rhum agricole, and their signature drink to showcase it is the Ti' Punch (petite punch). As easy to make as an old fashioned, this is the drink that will make you fall in love with rum.

      Just a quick question: What's the difference between rhum agricole and cachaça? Couldn't you use them interchangeably as both are distilled from sugarcane juice rather than from molasses?

    As a french martinican I am so glad to see you make the institution that is the Ti'punch. Also I am pleseantly surprised ! Why did you choose this drink which is not so famous. Have you been to Martinique ?
    Also Clement is a really good rhum, just the best Martinican rhum to me is Jm or HSE. You might want to give it a try ;)

      Brother, nothing is better than a Ti Punch made with a Rhum Neisson or as called in Martinique "Zépol Carré" ! For white rhums, JM is a great one too and the new A1710 is interesting. For aged or dark rhums, the best are St James, HSE, Bally, and the best of the best , La Favorite "Le Flibuste" (in my opinion the best rum in the world, no contest). Clément is not too bad and the easiest to find in the USA, but the other ones are generally better.

      I was inspired by a new bar here in SF called Obispo which is all about rum, and they make a mean Ti' Punch. I think they use La Favorite blanc rhum

      Ti’ Punch is also one of the first, if not the first recipe in one of Death & Co’s books. I suspect that is a large reason of it’s somewhat recent rise in popularity. Rum and Tiki are also rising up again, minus the kitschy bar atmosphere. 🙂

    There's a Rum Agricole tradition in Madeira Island that led to a similar drink called Poncha. They make it with several flavours from tangerine to mango but the most traditional is called Pescador (Fishermans) and is only made with lemon and sugar. It's interesting bc the process starts with the skin of a full lemon (no pit) mashed with sugar, only after lemon juice is added, and then a healthy dose of 50abv white agricole rum
    It's funny that you post this video and yesterday I came from a vacation in Madeira Island. I'm bringing several great wines and rums... One bottle broke, and it's the one you're using to make this video haha

    You should try to make it by first adding sugar, second press lime and mix them up. Then add the rum. This way the drink is more balanced since the sugar is kind of dissolved by the lime juice (like a quick oleo saccharum).

    In French Guyana the Ti'punch is done slightly different. You start with a 2oz glass, you "coat" the bottom with thick cane syrup, then you squeeze the juice of a sixth of a lime and drop the lime piece in the glass, finish it by covering with rhum agricole (preferably from La Belle Cabresse) up to the top.

    I usually prefer to put sugar then lime to let and mix with a spoon to allow the sugar to melt, then add the rhum, if you put rhum second the sugar don't dilute well in alcohol...

    Didnt have any of the ingredients so i made something up, same thing but replace the Vegie rum with regular rum and the lime with a lemon. plus a few extra drops of lemon and add half of a bar spoon of maple syrup and its really good.

    So happy to see this video! Absolutely obsesseddddd with Ti Punch. It’s practically all I drank for a while after getting back. You’ve gotta try Neisson and JM if you haven’t previously, generally regarded as the best and crowd favs (and justified!) It’s also pretty good with a lightly aged agricole to switch it up sometimes - the “eleve su bois” ones are just rested in large oak vessels instead of stainless. Not quite “aged” as they don’t spend time in small barrels for extended periods, so they still retain a lot of the grassiness. Great video, Nick!

    While watching, I am drinking Hot Whiskey Punch (Blackwood's, from Wondrich's *Punch*) from what one might consider the polar opposite climate to that which Ti' Punch hails (apart from the moisture), yet they are pretty similar. Spirit (Whiskey vs Rum), raw type of sugar, citrus peel oils but little-to-no citrus juice, and some water (although one is on the verge of gaseousness and one is solid). It's getting warmer here in Iowa, but I'm not quite ready to give up the winter drinks (apart from Egg Nogg, which has taken its toll).

    It's very similar to a Caipirinha, just with a different cane juice based alcohol. I guess there's a bit more lime in the Brazil version.

    I've used your clear ice making technique in the past with success but I notice that your ice doesn't crack from thermal shock when put in contact with the liquid. My freezer is at -18c, is that too cold or am I missing something?

    This sounds similar to a Caipirinha. The main differences are that you’re using cachaca, which I’ve been told is similar to rum both in flavor and distillation (I’ve never actually had it), and you’re muddling the hell out of the lime.

      It's from the Dominican Republic and its kind of like a mulled wine i guess. wikipedia describes it much better than I can: a drink from the Dominican Republic that is concocted by allowing rum, red wine, and honey to soak in a bottle with tree bark and herbs.

    This makes no sense using a swizzle stick without ice. That could have been done with a spoon. The point of a swizzle stick is to mix the drink but also to chill and dilute with ice spreading the chill to get the glass cold and frosted.

      It works best with white rhum or very young golden rhum. For example, the one year old JM golden is perfectly fine as well (the one called "rhum élevé sous bois"). Older rhums, typically the ones called "rhum vieux" have a less vegetal, more wood-like flavor that is less desirable for a ti-punch.

      It is a bit different from other kinds of rhum but I think if you don't like rhum in general, you're likely to dislike this type as well

      That depends what you mean by 'traditional rum' really. It's a good solid spirit, punchy and grassy, with a very distinctive column still edge to it. It's nothing like the over-sweetened crap you see in most chain bars, the ones with pirates and colouring/flavouring etc. If you're comparing to something like mount gay, appletons etc, then it's different but still a decent rum. If you mean Kraken, bacardi, morgans etc, it's a whole other world.

      @@SImonSmiles84 Thanks for the info. When I say 'traditional rum' I was more talking the later of what you mentioned, what you traditionally would find at a bar. I have never been a fan of the heavy syrupy feeling and flavor, in fact it actually makes me partially nauseous. From what you mentioned, it sounds like this would be worth a try, so I'll have to pick some up!

      @@Flupperz Martinique Rhums have been winning the best Rum competitions for years. It doesn't get better in terms of fine taste and quality. If you compare to whiskeys it's like Bacardi is Jim Beam and a good Martinique Rhum is Macallan. Give it a try if you see a bottle! In general they are rare as it's a small island with limited export quantities.

    I love your videos and always have a blast watching them.
    I have a suggestion for a cocktail for one of your future shows.
    It's from the parody movie Loaded Weapon. As best as I can tell, it's one part Jack Daniels, one part vodka, one part unknown drink (possibly bourbon), and two squeezes of chocolate syrup. With your expertise and some modifications, I think this could turn into a good drink.
