I love your style of bbq. I think T-roy puts WAY to much stuff on his cooks. I bet he spends more on ingredients than the meat! Just my opinion.

Great video. I think the camaraderie between Troy and yourself really makes it special. It doesn't hurt that a tired Justin is even funnier than a completely alert Justin. Will you please make a "farm to table video" featuring the hog yoga, pilates, etc? Happy New Year to you and your family.

Love that LSG with the chest addition. So many options. I can think of fun things to do with that end of the pit. Only did pork belly burt ends once early into my channel. Thought I had burned them, and didn't show the video. They were delicious. After seeing yours, maybe I was wrong. They do get rather dark. Time to try them again. Enjoyed all of the vids you and Justin put out. Lot of good looking food and information. Cheers

I might smoke them the same way, but with a honey BBQ sauce. I would also try a glaze. Use two aluminum pans over heat, and a metal colander. Transfer the meat and sauce from one pan into the colander, while it is over the other pan. Then in the second pan, bring the sauce back up to temp, and pour through the colander into the first pan. Repeat until the meat in the colander has a tight glaze, about a dozen transfers, bringing back up to heat each time. Then smoke some more. Gonna try this soon.

    T-Roy,
I really enjoy your channel, thanks for all your videos! One question I have; Why do you use pre-made rubs and sauces? I've always made my own pork rub and brisket rubs, and typically just use bottled sauces as a base for me to build upon in a sauce pan. Just curious about your thoughts and reasons behind going premade over mixing your own. Especially when they're basic like salt, pepper, onion, and garlic. Thanks! Keep doing what you do!

Troy &/or Justin, I get both ideas of keeping the pit clean and the preference for cooking without one. How would the compromise of using a grate in a pan work? Would the drippings burn and give off a bad taste being so close to the meat?

they can't do more than a few because they smoked 4 other things that day. I guarantee you could plow through 6-10 of them easy if that's all you made that day. they didn't shrink up nearly as much as they thought they would tho. mine are usually cut about half that size. when going slow they don't seem to lose too much mass.

  • @guyfromostrava

Here's an idea... before you cut the meat, get some rub on it from both sides, then cut it in long strips, just like you did, then coat the now exposed meat from both sides, and then finally cut it into cubes.
