I've tried a similar method for pork belly burnt ends, turned out pretty good. Now I want to try cured burnt ends to kick it up a notch. I've been curing my own bacon for awhile now and think it might be worth a try. Troy, I use racks that are basically stainless cooling racks, nothing sticks to them, great for Jalapeno poppers or chicken wings as well.
That does sound like a great idea curing the belly beforehand. Let me know how that works out!! I do have some SS cooling racks, but wanted to try out my new grill pan. I should have sprayed it down with some oil. LOL Cheers to ya brother!

That's some serious pig candy deluxe !!! I finally ordered some of that mango habanero rib candy and it's amazing stuff. I used it on some bacon wrapped jalapeno and cream cheese chicken bombs last weekend and everybody LOVED it. I'm going to have to get a pork belly and try these burnt ends for sure !!

I made these the other day on my webber the heat was steady at 250 to 280 steady.. the final product was very flavourful got lots of bark on them but the meat was kinda dry the fatty part was sweet and delicious but the meaty part didnt hit the mark. What do you think i did wrong.. 3h smoke 1h covered 1h uncovered. Thanks in advance. 🍻

I recently purchased a pit barrel and I’m firing on all cylinders wanting to smoke everything, my question , with a short as these are to cook, do you still fill the coal basket with the same amount of coal? Or do you lighten it up?

Why the rebar? Not sure what that did for the cook. Didn't look to support anything and not entirely sure what flavoring it added. Also....why the Tiger sauce? What did it do to support the flavor profile?
They won't get sticky without that sugar. Some folks do make them dry, but I like them sticky and sweet. It's fine eating either way!!! Thanks for watching!
As Rus already stated, when I am looking for good meat from HEB, I go to a particular HEB and the butchers there know me very well. It's actually funny, I eat Prime ribeye so often that when they see me walking up to the counter, they ask me how many I want. They already know how thick I like it cut and that I like bone-in ribeye from the chuck end of the roast. LOL And my HEB has pork belly, skirt steak, flank steak, and other cuts already in the case, so I just tell them which one I want. They usually only have to cut meat for me if I want Prime ribeye thick like I like, or if I'm wanting beef ribs with meat on them. I do have my butcher's cell# too, so I sometimes call in an order if I'm in a hurry.
Great question Kyle! You must always have the rebar in to get the correct air flow on the PBC. Without the rebar, the cooker would get too much air and it would cook a lot hotter. I appreciate you watching brother!

One thing i did with these that really helped was to cut off some of the bigger pieces of fat bcuz they dont always reneder all the way out

I recently purchased a pit barrel and I’m firing on all cylinders wanting to smoke everything, my question , with a short as these are to cook, do you still fill the coal basket with the same amount of coal? Or do you lighten it up?

Why the rebar? Not sure what that did for the cook. Didn't look to support anything and not entirely sure what flavoring it added. Also....why the Tiger sauce? What did it do to support the flavor profile?

As Rus already stated, when I am looking for good meat from HEB, I go to a particular HEB and the butchers there know me very well. It's actually funny, I eat Prime ribeye so often that when they see me walking up to the counter, they ask me how many I want. They already know how thick I like it cut and that I like bone-in ribeye from the chuck end of the roast. LOL And my HEB has pork belly, skirt steak, flank steak, and other cuts already in the case, so I just tell them which one I want. They usually only have to cut meat for me if I want Prime ribeye thick like I like, or if I'm wanting beef ribs with meat on them. I do have my butcher's cell# too, so I sometimes call in an order if I'm in a hurry.

Great question Kyle! You must always have the rebar in to get the correct air flow on the PBC. Without the rebar, the cooker would get too much air and it would cook a lot hotter. I appreciate you watching brother!

Hey Pickles, this was my 1st time doing pork belly burnt ends and they did turn out fantastic. If anything, I probably used a little too much BBQ sauce, but they were still excellent and sticky! LOL
