how to make zucchini loaf

  • This loaf are very easy to make, great tasty addition to dinner.
    Ingredients:
    1. 4 zucchini, coarsely grated
    2. 3 bacon rashers, finely chopped
    3. 1 large onion, finely chopped
    4. 1 cup of almond meal + 1 teaspoon of baking powder (or use 1 cup self-raising flour)
    5. 5 eggs, lightly beaten
    6. 1 cup grated cheese
    7. 1/4 cup rice bran oil
    8. Salt and pepper
    9. 1-2 tomatoes, sliced
    Method:
    1. Preheat oven to 200 C (395 F) and lightly grease a deep loaf pan. Line with non-stick baking paper.
    2. Combine all ingredients except the tomatoes in a bowl and season to taste. Spoon into the loaf pan and top with the tomatoes. Bake on the tray (in case of spillage) for 1 hour, until a skewer inserted into centre comes out clean. Leave in the pan to cool slightly, then cut into thick slices. Makes 8 serves.
