In the Philippines, we have this pan called llanera which is the mold wherein the flan sets, and by steaming it, it somewhat makes the caramel go to its liquid form. Honestly, you have to put a little bit of water in dissolving/caramelizing the sugar in low heat. Mix the mixture until it looks like a liquid caramel. After caramelizing, spread evenly and leave it until the mixture in somewhat stable. You don't need the butter either(opinion). Then place your egg-milk mixture on top and proceed in steaming. Tip: you can put a little bit of lime juice and a little lime zest to neutralize a bit of sweetness and the "umay" taste/feeling.
Yoshi try Philippines bbq.. Ingredient garlic 2 whole sprite 350ml soy sauce calamanisi sugar pepper marinate 1/2,kg meat overnight... Then grill its up to you if you'll use pork chop

Tips on cooking Leche Flan: - Don't beat the mixture too much, just enough to mix the ingredients, it is to make the flan soft - Steam the flan in low boil for 45mins instead of just 25mins, that's why the caramel was retained in the container
