Sisig was originally from our province, Pampanga, in Luzon. We often have sisig as beer match. But yes it became like one of the staple-affordable-appetising dishes out their. And yes we use bamboo shoot(Labong) as well in our dishes.
Bamboo shoots is LABONG here in Rizal, eaten as ginisa (stir fried with condiments and some meat or seafood), as adobo or as ginataan (cooked with coconut milk).
All Filipinos definitely love sisig. Most of the Filipinos eat it with beer. It is a "pulutan" (appetizer taken with alcohol). Some Filipinos eat it with rice. It is really yummy! 😋

The version of sisig recipe that I grew up with has a "pig skin, pig's ear (the best) with pork meat" all chopped in small pieces and mixed and fry together with onions, garlic and chili and then after cooking you top it with egg while it's still hot and mix it. Pour some lemon and viola! 😋😋😋 But I would also love to try that version though 👌😊
With pig's ears, I agree. But it tastes better with kalamansi juice than with lemon, that's just for me, though. Wonder if they have or sell kalamansi in Japan?

Philippine culture is so diverse and we're very accepting of the fact that we are all different. There are thousand ways to cook our food and we don't discriminate because the gathering and chit chat is more important than the recipe. Food brings people together.
i remember when my mom would drop off my lunch back then when she wants to spend the whole morning cooking sisig. i'd have a big container because my friends have special portions, and said friends would be the first one to eat it than me 😂 the only thing we'd buy from the school canteen was more rice. glad to see you guys try it! ^^

We have bamboo shoots here, we cook it on a season of it, most of its only available in farm areas. we love sisig so much!! you can try pig face or belly (if pig face is not available) deep fry it (with salt and pepper) at least let marinate overnight then fry it. then do stir-fry the garlic onion in a butter+olive oil (ginger is optional, but normally we in our region we avoiding it). then slice the fried meat into cubes or preferred small cuts, put it in a stir fry add salt and pepper, Then put mayo on it (if u like u can put little mozzarella cheese) and lemon juice (if preferred spicy put cut chilies or chili flakes). Once its thicken u can put fresh egg and chilis on it--serve it on a sizzling plate put it on the stove or in the oven once it is hot put little butter on it then plate the sisig, plus with friends and ice cold RED HORSE!!!!
