- Homemade Meatloaf with Pepper and Onion Relish
2 1/2 pounds ground beef
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons Mrs. Dash original seasoning
1 cup finely diced green pepper
1 envelope Onion Soup Mix
2 eggs
15 ounces diced tomatoes, drained
2 cups Quick Cooking Oats
1/2 cup tomato sauce
heaping 1/2 cup Pepper & Onion Relish in the meatloaf mixture
heaping 1/2 cup Pepper & Onion Relish on top
Preheat your oven to 375°. Prepare your meatloaf baking pan by spraying with nonstick spray. Set aside.
In a large bowl, combine the ground beef, salt, black pepper, Mrs. Dash, diced green pepper, onion soup mix, eggs, diced tomatoes, quick cooking oats, tomato sauce, and 1/2 cup of pepper and onion relish. Mix everything together well using your hands.
Scoop the meatloaf mixture into your prepared loaf pan, mound on top, and cover with the remaining 1/2 cup of pepper and onion relish.
Bake for one hour to one hour 15 minutes or until the center of the meatloaf is done. Do not over bake.
After removing meatloaf from the oven, allow it to rest on the counter for at least 20 to 30 minutes before slicing.

I will need to look for that relish in my area. This sounds wonderful! My former pastor's wife gave me a wonderful meatloaf recipe. She forms several mini loaves, fries in skillet just till brown. Then she puts in a 9x13 pan and puts topping on each loaf. I love the crusty edges & topping on meatloaf so this technique works out great for us! I have been binge watching your videos today. I have saved several on my Pintest boards. You two have been a blessing to me. I also loved it when Tom said he will not take off his wedding ring & gave the reason why. That is so sweet! I love watching you all!

I fry mine too. And add sauce on top of the stove. Not just the top of the loaf.
I would give you some ideas for possible improvements in your delicious looking meat loaf.
Substitute about 25% of your Ground Beef for a good Italian Sausage.
Rather than the onion relish Barbecue Sauce, or steak sauce.
Rather than Mrs Dash, Montreal Steak Spice.
A cube of beef bullion, would add more beef flavour.
A teaspoon of Marmite, or Vegemite will give it a deep Umami Flavour!

I use stovetop stuffing mix. I use a rolling pin and smashed them into crumbs. It also gives a great flavor to the meatloaf.

That's another great option. We just want to encourage you to NOT omit the relish. We think that's a great part of this recipe.
I also use pepperidge farm herbal bread crumbs for dressing in my meatloaf.❤

I made the biscuits a little bit different being I did not knead them. I stirred them in the bowl, floured the surface and poured the dough out, shaped the dough, and cut the dough out. Easy enough. I made the meatloaf exactly as you did. I watched my husband take the first bite, his eyes lit up and he said “it’s delicious”. Where did. You get that insert you put in pan for yor meatloaf?
The pan and insert come as a unit. Any good housewares store or hardware store should have them Or Amazon, if you shop there.
I have my Grandmother's recipe for sweet pepper relish. It uses red and green peppers in equal amounts with a very basic "brine". She would get a bushel of each and we had to help grind them up. It is especially good with meatloaf. Never thought of putting it in the meatloaf though. ❤

_My_ mother used a slice or two of sandwich bread, but she moistened it with a little milk rather than shredding it. When you knead the ingredients together, the bread breaks down nicely.

The rule of thumb is for every lb of meat is one egg and Bread crumbs I cup. I use tomato soup on top of mine. Looks good 😊

I love your videos and your meatloaf recipe is similar to mine, minus the Ms Dash and the relish. I put a mixture of ketchup, brown sugar and a dash of mustard on top of mine, it give it that sweetness I love. You both are awesome!!

The relish is rather expensive, but there are recipes online for making your own to keep in the refrigerator or canning it using a water bath canner. It looks very easy to make. I took up canning several years ago, both water bath and pressure canning and it has been a wonderful way to stock my shelves.
Absolutely, and anything that you make yourself is going to be even more delicious. We believe that the relish is a real game changer in this recipe. So we don't advise leaving it out. But if you have made your own, that would be even better!

I always mixed meatloaf like you until someone told me to put it in my kitchenaid mixer. It worked great and I think it helped it hold together better when cooking and slicing. Love your videos.

Sounds interesting how long do you mix it for, with what attachment?
This works really well for binding meat loaf. I found that putting even just a third of the meat in the mixer firms up the meat loaf, and makes slicing it for sandwiches easy.
I use the dough hook and just until ingredients are evenly distributed and no more. Too much mixing and it will make meatloaf and meatballs tough. I also lightly beat eggs befor addkng to a recipe so the mix in better without yolk and whites separating. I also freeform loaf like my mom did. More crust.
I made this meatloaf. I found pepper relish and Vidalia onion relish during a recent visit to Tennessee.

Hmmm - I collect Meat Loaf recipes - and I am going to try this one. Your story about your Mom and the bread made me chuckle - that's exactly what I do. I let the bread go stale overnight, to dry it out a little (so it's easier to cut) - and then dice it very finely the next day. Up here, North of the 49th - we don't have a pepper & onion relish combo. But we DO have a Thai Sweet Chili Sauce which I have used in Meat Loaf - exactly as you have described. Half in the Loaf itself, and the other half painted on the top. This is comfort food at its finest. Thanks so much for this recipe . . . Can't wait to check it out.
PS - I use surgical gloves when I'm making meatloaf. Like you - I have a compromised immune system, and pick up infections very easily. So I have been isolated since before COVID. I wash my hands every time I turn around - but I take no chances as to what might be under my nails. Surgical gloves can be bought at most drugstores and large supermarkets - because women who dye their hair use them. Bit I've found them really handy for handling raw meat - most especially when I'm cutting up a chicken - or making Meat Loaf.

I have just found your channel and have been binge watching your videos. I must say you have some delicious recipe's and I enjoy watching and trying a lot of them. I can during the summer from our garden and have a delicious sweet tomato relish that I can. This made me realize I must try using it on my meat loaf. By the way I enjoyed watching your breakfast sandwiches and got tickled with the breakfast wrap with bacon eggs and cheese. I'm a Texan and we call them breakfast burritos here. lol

My Aunt Antoinette used to make the best meatloaf ever. I was in my 20s and never thought to ask for the recipe. The leftover meatloaf could be sliced and made into sandwiches. I do know she used oats and tomato catsup in the meatloaf. I lay three strips of bacon across the top of mine. I am still looking for the perfect meatloaf recipe. I have never used Mrs. Dash, but it seems like a wonderful addition to the meatloaf and to my spice shelf.

Oh golly, my dad made a meatloaf pan for mom. He drilled holes in one pan, then put canning jar rings in the bottom of the second pan so the grease could separate. I am 72, so not sure they had them to buy then.

I enjoy your channel. I’m a new cook (83 year old guy) and I have made the non-cook’s meatloaf that I’m proud of. It is the easiest recipe I’ve found for meatloaf for the non-cook or the newlywed. I keep telling my wife I’m a newlywed husband cook. She’s had a stroke and the cooking is up to me now. I use one component of my mom’s recipe as I use half hamburger and half sausage. The rest is mine as mom usually made an awesome meat roll that I might try one of these days. The recipe: 1 lb of 20/80:hamburger and one lb of mild sausage. One box of Stove Top herb stuffing. One onion chopped. 2 eggs. One cup of Sweet Baby Rays bbq sauce, I like the honey sauce. I mix all the ingredients together and put it in a loaf pan. Don’t have a meatloaf pan and don’t think I need it. I don’t put ketchup or anything on top but think I might try the relish you used. Sounds delicious. Cook till center is 165degrees and eat. It’s simple, easy and even I can do it. Enjoy your recipes as you don’t mind us modifying to our taste. I’m an ish type of cook and would probably be a lousy baker as I think everything must be precise in baking. 😊
That is a great use of a jar of something I'd not know how to use. Your idea is Brilliant. Peppers and onions goes so very well with meatloaf. This is certainly one of those "why didn't I think of that" moments. I'll try this on my next meatloaf.

I made sausage and peppers last night. Same ingredients but in a basket on the grill, for a bit of charring. Sauce was Garlic Alfredo. Chefs kiss😊
😂😂Squish definitely is a culinary word!! You have me so excited to try and find a pepper and onion relish to add to my next meatloaf, which is one of my favorite things to eat. Love it the first time and love it on a sandwich the next day. The next time I order from Harry & David, which is usually around Christmas, I will look for that particular relish. I don't like a packed meatloaf so I make a meatloaf casserole that my family loves. I kind of just made it up years ago but it's so good.

we have that onion and pepper relish and that other one too in our small town local grocery store. It was kinda of expensive but I bought both of them and I love them on hotdogs and in meatloaf. Made your recipe and it was delicious. Since I didn’t have the H & D pepper & onion relish I used an Onion Chutney from Aldi’s. Omgosh it was so good. A little sweet and savory too. I have to say I was a little skeptical of using the oats instead of breadcrumbs, but that was a surprise too. Was great. Thanks!

I made this tonight. House smells great. I added a shredded carrot.no peppers. Added rotel instead of petite tomatoes. Tried to find the pickle and onion relish with no luck at Walmart. Thank you for your recipes.

Hello from Belton, Texas. I ordered the Relish on line and made this meatloaf. It was the best tasting meatloaf we’ve ever had. I would have never thought of putting relish in a meat dish like this. I will never cook meatloaf any other way. Thanks for sharing this recipe. I’ve also discovered Harry & David products. I can’t seem to find them in Texas so I will be ordering them on line. I also want to go to the Derby Dinner Playhouse in Clarksville Indiana. It looks like it would be right up our alley of entertainment.

I made a meatloaf last week, and I put it in a Bundt pan, and used stove top stuffing mix instead of bread crumbs, was sooooo delish, and I always put some frozen peas in mine, I love meatloaf.
Looks and sounds good Tom ! Now is the onion and pepper jar relish sweet or hot (spicy) ? Will have to try your recipe ! I do use the same ingredients I use seasoned bread crumbs when I make my meat loaf ! Mmm, So Yummy ! 😊😋🥰

I have a request about your recipes. I I'm a retired teacher, and I volunteer with the Kairos prison ministry. Our Advising Committee for our chapter in Mississippi is discussing starting a cookbook and selling it as a fundraiser for our branch of the charity. Could we put some of your recipes in this book as long as we put an annotation that on it these are your recipes and not ours. I would be willing to pay for one of the cookbooks when it's published and send it to you as a thank you for your recipes. This is all dependent on if we come up with enough to write the book.
