I’ve tried 7up version, marinating, and direct cook without frying but this version really amazed me. Basic ingredients, simple cooking method, and deliciously outcome. Ive always done mine exactly this without the oyster sauce. And I always premix the sauce so that I can taste it if it needs more vinegar or soya before pouring over the meat. Mine is always a big hit as well. Thanks for the recipe.

Yung style ko is once di na masyado madami yung sabaw, lalagyan ko nalang ng oil tsaka high heat until ma render yung sauce at oil nalang pinaka sabaw nya. It yeilds the same results, almost dry fried na yung chicken and toasted na yung bawang at peppers. 😋

The method of cooking adobo originally came from China when our early chinese ancestors, most of whom were bachelors, attempted to duplicate how adobo was cooked in China. The ingredients and methods were basically the same, but these bachelors did not have the luxury of time to spend on cooking a dish, so they just placed everything in the pan and hoped everything will cook on its own, which is how exactly we cook our adobo today. Now that we have the luxury of time and have the appetite for better tasting food, it's time to consider other ingredients. I agree, coriander improves the adobo taste. Also, adding sugar and reducing the sauce, which is how the Chinese do it, and our early Chinese ancestors forgot to do, is something very important to achieve a better taste. Also, frying the chicken, will improve the taste and texture. If you combine all of these methods, I could not imagine how better this adobo would be compared to the traditional way of how we do it. Also, if you use the rock sugar, it will give a different buttery taste. You can also consider adding rosemary to chicken adobo as it improves the taste. But do not put too much of it as it can overwhelm all other ingredients.
Another way to prepare the adobong manok, thanks kuya for sharing. I have always marinated and refrigerated the chicken before frying, so I will give this way a try this weekend!

After the boil is the way to go as the meat will absorb all other ingredients better. Meat will be tenderized too.
