French Coconut Pie
1 STICK MELTED MARGERINE OR SALTED BUTTER
3/4 CUP SUGAR
3 EGGS
1/4 CUP BUTTERMILK
1 TSP. VANILLA EXTRACT
1 1/2 CUPS FLAKED COCONUT.
STANDARD PIE CRUST
Preheat oven to 325 degrees. In a glass bowl, melt a stick of margarine in microwave. Add sugar and whisk. Add eggs, buttermilk, vanilla and whisk well. Put coconut in bottom of your unbaked pie shell. Pour the mixture over the top of coconut. Bake for 1 hour.

Pet Ritz Pie Crust!! Ive been using that since 1980. It comes already lined in a foil pie pan package of two. You can get regular or deep dish. I like that the one you used seems to have enough dough that you can pull extra over the edge and crimp it. I will try to look for Pillsbury in the roll at Sam's or Costco's or BJ's. Thanks for that.

Please pray for my daughter she is now taking chemo. Christal has colon cancer. My husband passed away with it 4 years ago. They say it can run in the family, well we know it for sure. I take her to Lubbock for staging Tuesday. Pray for her that they find it staying where it started.

Tammy, I enjoy your channel. We love coconut and I use coconut cream, coconut oil , coconut extract along with vanilla extract for the custard and toasted and untrusted coconut. No butter. An egg custard with just coconut is just not enough for us. I grew up with my grandparents on a farm and ranch in the 60s and 70s, and she was the best cook and baker. Recipes can be improved without hurting the memories of our past. I think you are such a hard worker. Thank you for what you do.

Both my grandmothers and my mother called this French Coconut pie. To serve my crew this pie, we either make about 3 pies at a time or sometimes use a half-sheet pan and make a "slab pie'. Either way, we have enjoyed this recipe countless times! You know with my crew, there are never any leftovers! Thanks for the demo of another recipe, y'all!

I love this pie but I think I’ll try to make the “Impossible Pie" version. You should introduce your audience to "impossible pies" because there’s a whole generation out there that doesn’t know about the magic of these pies! They’re so easy, quick & delicious. The best part is being able to make a pie without a crust.

l did it in the microwave, & came out better than the oven.
My grandma would make egg custard, chocolate custard and coconut custard. All were so good.

Tammy, please read your Oven Manual, and see is it is safe to line the bottom of your oven with foil. The last three ovens I have bought for remolding my kitchens have all said NO FOIL. If you look back at this video you will see your foils, trying to breath. I just don’t want you to ruin your Cadillac oven. Please take my ADVISE. READ THE MANUAL TO MAKE SURE IT IS OK.!
Yeah my manuel says not to, so I just put a foil pan on the bottom rack.
If the heating element is under the metal base, the foil is a big NO NO. I argued with my mother about this for about 6 months until her oven started heating uneven then broke within a year.
My oven is the same.

Custards were my fathers favorite, my husband used to fix the equipment at an egg farm and would come home with 2 flats of eggs every time he went, some times a few times a week, I used to make a ton of custard pies. I miss those eggs, most were double yolkers.

Yes you can. Or just drizzle melted chocolate across the top in two directions!

Note: Never place aluminum foil on the bottom of your oven to catch spills. The foil disrupts the oven's air flow and heat pattern, resulting in uneven cooking. Cleanup is so easy with the tips below that foil is completely unnecessary.

@YarnLoverRegina, that sounds like the Impossible Coconut Pie made with Bisquick except it uses regular milk not buttermilk. I'm sure if you Google it you'd find it. I don't know how to link it, sorry.

I was late getting that recipe…only got it about 5 years ago and had made it once at my cousins house when she gave the recipe,
a couple of months ago I made it again, then I started wondering if I could use well drained pineapple instead of coconut so I tried it and it worked. Next I’m going to use canned cherries.

Impossible coconut custard pie.
INGREDIENTS
4 eggs
1 ¼ cups sugar
½ cup flour
¼ cup butter melted
1 tablespoon vanilla
½ teaspoon salt
2 cups milk
1 ¼ cups shredded sweetened coconut
INSTRUCTIONS
Preheat oven to 350℉ and grease a 9-inch pie plate.
Beat the eggs in a large bowl.
Add the sugar, flour, melted butter, vanilla and salt. Whisk until combined.
Add the milk and then the coconut.
Stir until combined then pour into the prepared pie plate.
Bake for 40-45 minutes or until a toothpick pressed into the center of the pie comes out clean.
Let cool on a wire rack for at least an hour to set up.
Serve warm with whipped topping, if desired.
You make your pie crust look so much better than I can, although mine isn't a total crash and burn. And yes, it was Pet Ritz . Does anyone remember the frozen Ritz pies in the freezer section? They were great for a quick dessert.

take the foil OFF the bottom of your stove it will damage the enamel coating by trapping heat on it NEVER USE FOIL ON YOU STOVE

The pie looked delicious. That is my husband’s favorite pie. I could never find the recipe that his mom made but this I think may be the one. The other recipes that I tried just had to much sugar.

I was always told heat reflecting off foil causes more heat and if you want a liner in the oven you should use silicone. I put my pies on a bake sheet in case they run over. So much easier to get out of the oven too. I am such a clutz with small hit things😀I just read about foil no no in oven. I say no to foil too.

Looks yummy. I've seen other recipes that use coconut milk or sweetened condensed coconut milk instead of regular milk, so maybe Ill try a combo of buttermilk and coconut milk.
