My mom taught me to do that with the scraps of pie crust too! I'm sure she learned it from her mother. We usually sprinkle some cinnamon and sugar on half of the dough before baking too. Thank you for the lovely mother's day video. ❤
The MS trick: I learned in high school (so 1980-ish) when I was serving at a school banquet. Works for everything. In my case, soup and coffee (and no, not together!). The pie - yum. Will be making soon!!

It would have been in the oven for so long by the end, I would think the crust around the edges would burn.

Never, ever, ever use the C-word, viz., Crisco. Major ugh. Inedible. Only an all- butter crust or maybe one with lard. But, I am charmed by Mom Judy‼️ She’s terrific & I love her Oven-Fried Chicken recipe‼️♥️ One more thing: please use ecologically sound unbleached parchment paper‼️

My brother-in-law, THE pie maker in the family, almost always uses lard, or a blend with lard & another fat....always delish!

We lowered the oven temperature before baking the custard so we didn't need to shield the crust.

Since it's a coconut cream pie, probably coconut milk or coconut cream would be better.
I agree with Virginia's reply -- and if you can't get coconut milk or coconut cream, unsweetened almond milk should work, as well.
