I made this pie yesterday and as a 61 year old man with no baking experience, I must say it came out great. Maybe my baking career is just beginning. Thanks for the video
STEPHANIES' videos offer the BEST presentations, in my not so humble opinion. STEPHANIE adds all the conversions, demonstrates the process of how to... After perusing all the videos, I always choose STEPHANIES recipies👍 Her recipes are ALWAYS DELICIOUS❣ 63 yrs will catch me, January 1, 2020 and this is the first Coconut Custard Pie I'll be making, also. It was my ģrandfathers' favorite and my dad always bought it during the holidays. I followed suits but now I'm going to make it. Could this be any easier?
@ D Richmond 👍 I hope you do begin to bake. Baking is my preference, although I love to cook. Such scrumptious desserts or just anytime sweets can be had by baking. The hype is worse than the reality, when it comes to baking. BAKING IS NOT DIFFICULT and you don't need dough hooks and fancy machines. When I learned to bake, that stuff was never around and when you feel the dough change in your hands, you'll never forget it! BAKE❣ And STEPHANIE FROM THE JOY OF BAKING, maps out all the steps making baking super easy and delicious❣ Keep on baking, buddy!
Just happened upon the Impossible Pie recipe and can't wait to make it ! The video presentation was SO enjoyable that i immediately subscribed. That's not like me ! Thanks ! Look forward to more !!!
My favourite baking lady in the whole wide world 🫶 I missed you 😘 School is taking up all of my time so I am hardly on UA-cam. The coconut cake is something my grandma made on Saturdays for her grandkids. She use to cover the top with whipped cream ❤❤❤❤❤❤❤❤
I made this pie last night and omg, it was amazingly delicious! I used coconut milk instead of whole milk and it turned out fabulous. Thank you for this recipe. It gets 5/5. It was super easy too...I had all the ingredients already in the house except for the coconut milk. :-)
Been looking for this recipe for forty years, since mom died. Now I can share with my family. Being from the south my mom called this pie MILK PIE. Thank you for sharing.
I highly recommend serving this chilled. I had it warm, but then after it was left over night in frig and served cold the flavor was so very much better. It goes from tasty to absolutely delicious when you chill it. Thanks for the great fun and easy recipe.
I used only 1/2 cup sugar, 1 cup sweeten coconut and 1/4 cup non sweeten coconut, 1 cup 2 % milk and 1 cup coconut milk. It smells wonderful and it taste so good, 3 of us had 2nds. I would make this again and again! Thanks for the simple recipe joyofbaking (Stephanie)! And yes, you were right, it takes longer to wash my food processor than to make this pie! lol!
This is the first "Impossible pie" that my mother made back in the 60s. I just made an Impossible pumpkin pie a few days ago and have made a couple of variations over the years. They never fail and are so easy!
I made this pie yesterday for dinner. I blended it in my Vitamix, and it was perfect. I am making a lot of bread and other recipes I have always wanted to try during our “stay-in-place” order in Illinois during the Covid-19 pandemic. It was so good I ate half of it! Thank you for the recipe.
I'm making this today after 3 of your other cakes came out PERFECTLY.... I've learned things I never knew after 50+ years of cooking..... thank you SO much for taking the time
My mama called this "Self-Made-Crust Pie". This was an all time go-to for her whenever we had a big church dinner or company at home back in the mid 60's on up till 2011, a year before she passed. Back when I was learning to cook, I would help her make all kinds of good things in the kitchen and in making this pie, sometimes we added coconut and sometimes not, which makes an awesome, delicious custard pie as well, by the way. She clipped this recipe from a Reader's Digest (TM) around 1964 or 65 and it's still in one of the many recipe boxes she had, which I now have. I'm in my 60's now and I still love and use those old "vintage" recipes of her's to this day. I get lots of "Ummm, that's so good" remarks whenever I take something from an old recipe to church. This is one of the fastest and easiest pies to ever make. Anybody can do this. Thank you so much for making this video. I love all your videos. Oh, and your puppy baby is adorable.
Stephanie, first of all, you are the best UA-cam Cook/Demonstrator. Second, I love how precise and informative you are and how you add some light humor here and there in your later videos. Btw, I tried this Impossible Coconut pie, but replaced the All Purpose Flour with Oat Flour and it turned out perfectly! Dealing with Dermatitis and Psoriasis, there is some ingredients in most recipes I have to either replace or not eat at all. So, thank you for all of your time and recipes! -- Alex
Dear Stephanie, On behalf of all Egyptians, I'm sending you best regards and good wishes. I came across your UA-cam channel in s random search for a recipe and I tried yours. My god it was fantastic. Since then I got addicted to joy of baking and I recommended it to all of my friends and family. You give me all that i need, accurate ingredients in ounces, grams, mls , cups , size and kind of pan, temperatures of baking, alternatives for ingredients and finely a description of the consistency and taste of the recipe!!!! The only thing is that I would love to see a list of ingredients show before you start any recipe. Thanks a lot Stephanie ❤
Delish! I'm eating this pie now. It's so simple yet decadent. I love real vanilla and always add more to my dessert than in the recipe. I added 1T and the vanilla flavor is awesome. Great pie!
Thank you for this recipe and a huge thank you from someone in Scotland who loves how the internet has opened our baking horizons but is frequently challenged with conversion of 'cups' to metric so I really appreciate you take the time to give metric measurements.
My family loves dessert but I don't always have time to make it. This great recipe solves the problem! You literally toss it together to make an amazingly satisfying treat! Dress it up for a fancy finish or serve it plain, it's perfect. Thank you Stephanie, another winner!
This channel's recipe is the one I have used for a few years now. I have made this pie many many times and it always comes out EXCELLENT!!! I highly recommend this one. It's easy peasy too. Even I can't screw this one up.
I have it in the oven now. I got the ingredients and instructions from your Joy of Baking website, but this was the first time I didn't watch the video first. It just sounded too easy. I was worried that my filling was too liquid, but yours in the video looks exactly the same. Can't wait! Thank you, thank you, thank you!
This recipe was a favorite during the Great Depression. It is basically a custard pie without the usual pie crust and fruit toppings. You have to generously butter the pie pan to get a nice little butter crust. Very versatile to flavor with lemon, orange, almond and others, and all flours like almond and gluten-free will work. It is easy to sub some of the eggs with a mix of 1 T ground flax seed to 3 T warm water if needed. Eggs are scarce these days where I live. Many stores have limited supplies.
@@PeaPie74 I think it would work fine and I do want to try it next time around, or maybe even coconut and almond flour together. The eggs are really what makes it into a custard, so any flour should work to hold it together at the same ratio of eggs to flour.
Omg I made this pie today using coconut milk it’s so so good my mother and daughter-in-law love it I had 2 pieces warm and cold from the fridge. Will make again thanks 🙏 for this amazing pie.
Unbelievably simple recipe, but it turned out fantastic. Equally yummy warm and cold out of the fridge the next day. Thank you for another great recipe!
Gluten free! I substituted Pillsbury Best GF multi purpose flour. I used exact measurements you provided. The pie is amazing and the GF flour worked perfectly! Thank you for sharing
Didn't have a 10 " pie pan, so I used two 8" disposable pie pans. Absolutely delicious! I cooked them in the Air Fryer (10 QT) one at a time for 30 minutes each at 320 F. Was craving coconut, but too hot today for the oven to be running for an hour. Took the air fryer outside and set it inside the gas grill. Cool kitchen and 2 Great Tasting pies! All of your recipes I have tried are always AMAZING. Thank you.
OMG....Another keeper....if U take this pie to an event, guests can be easily fooled, thinking that you've been baking this dessert the whole night long, not knowing how little of an effort it took. Presentation is superb, and looks reallly yummy. Might as well just double the recipe and make it in a bigger dish, cause it won't last long. Thanks for sharing, my dear....I'm forever greatful. You're the best. 🌻🌼🌹🥀🌺💐
You are the greatest teacher, I refer to your recipes again and again, not only for the deliciousness, but also for how well you make it so easy to follow!!!
Thank you so much for the video. I have made it today after watching it since I have everything on hands. My house smell wonderful and the pie tastes so good. I used one cup of coconut creamer that I normally put it in my coffee and one cup of whole milk. This is the recipe to keep.
Love your❤ presentation I always wanted to make a coconut pie but really was afraid of messing it up. I saw yours and how simple it is I love it. Thank you
I made your cranberry scones last night, i didn't have buttermilk so i substituted it with milk and it turned out delicious. Kept it in the oven for roughly 18-20 minutes though.. but it was still soft on the inside and nice and golden on the outside. You have wonderful recipes. Thank you.
sidrahshah80 make buttermilk at home by adding a table spoon of lemon juice or distilled vinegar to a cup of milk, let it sit for about 10 mins and that's it. I stopped buying buttermilk after discovering this trick years ago.
OMG Stephanie!! Love the way you explain step by step. Looks delicious. Can’t wait to make it myself. My husband is a coconut lover. I mean, any cookie , pastry with coconut in it he will love. I’m not a professional baker, but I do bake some things. Thanks for the recipe!😋
hello from Canada. This is such a cool recipe and truly so easy. The three layers amazed me considering you just pour a liquid into a pan and voila! Thank you! Your videos are always an inspiration.
Loved coconut since it’s usually a main ingredient where I grow up.Well definitely make this as all season dessert.Easy pitchy recipe .I injoyed her recipes ❤️❤️
Hello Mrs Stephanie. I really hope tht u r fine. I tried ur recipe 2day n i must say its exactly wat i wanted to make for my guest who r comin over for diner. Ths recipe is so easy but delicious. My husband n kids loved it. I also tried ur muffin wiz chip chocolate n it was a hit. Keep it up! Lots of luv frm us from Mauritius.
I just have to tell you, I love all of your recipes! You are the go to recipe whenever I want to learn how to DIY baking tips for any Family or Party events. Thank you! I hope you never stop....
Thank you Stephanie for bringing back this nostalgic recipe my mom use to make in the early 70's. You have a wonderfully enjoyable voice which I need as I am not a baker type (I love to cook tho), thus you lulled me with your voice to help me overcome my heebie jeebies about baking ! I made this and it truly is so easy and fool proof as I can attest to LOL. Thank you for this deliciousness and the happiest of memories of my mom. Cheers !
What a delightful lady, and what a extraordinary dessert. Restricted to a kitchen measuring 3ft by 8ft in Hong Kong, this pudding is a godsend. Thank you so much!
I've been baking coconut pie since I became an adult. My mother made them all the time. I've never made them without a flour shell. They are very delicious . Thank you for sharing your recipe .
I love the coral pink apron and spatula with the navy&white stripes! It's like the Lily Pulitzer edition of Joy of Baking which is fitting with a tropical food like coconut. I'm making this tonight! Many thanks!!!
I made this today and it turned out really nicely. It has a great flavour (first time having coconut pie). I sweetened regular desiccated (and toasted) coconut in a saucepan with sugar and a little water. I used a hand whisk and there were tiny lumps of flour in my batter so will use a blender next time or try adding the flour to eggs/ before adding the milk? Anyway it still looked and tasted great. Kitchen smells amazing. (I also used about 1/3 oat milk and some double cream as I ran out of milk, though you’d never know!)
I made this today. Delicious, not so sweet and the topping is crispy. Perfect. Thanks for sharing your recipe. This will now be part of my recipe collection.
It was delicious, but the bottom came apart when I served it. That was the only complaint I have, otherwise, it's yummy, I made it twice already, can't wait to make it again!
Stephanie, I've been using and loving your recipes for many years now and tonight I realized that I haven't been on your page in quite some time. I'm so happy to see that you have brought a lot more personality into your videos, with the clips of your dog and the taste test :) I love it! Of course, you have always seemed so lovely, I always get such a good feeling when I watch you bake. You are my go-to resource for deliciousness and I've never been disappointed. Thank you so much for all your hard work. I have everything I need for this pie, so I'm going straight to the kitchen now. Thanks again!
The recipe I use calls for self rising flour so no need for baking powder or salt. My whole family loves it! I made four pies on Thursday for my adult daughter tie give to friends. Eat it a little warm and enjoy!
I’ve been making this for years my family loves it, my friends love it everybody loves it. Nice to take when you go to dinner to somebody’s house. I making it for Monday I’m going to my sisters she’s making lunch and I am bringing this for dessert. Thank you you guys have such great recipes. This is a very favorite of mine though
It looks really good, and it's simple enough to make. I am generally distrustful of people who put sugar in cornbread, but I'll trust you on this. Gonna make this pie VERY soon.
Over this weekend, I made this. KING ARTHUR self rising flour is what I used and I used a can of COCONUT MILK. Needless to say, it was EASY AND DELICIOUS❣ By Monday, it was gone! I'll be baking this COCONUT PIE, often👍 Thanks again for this GREAT RECIPE❣❣❣
*Great dessert* Tastes like Coconut Custard - which is my standard "from scratch" signature Pie. *Popular in the South - Old South -as is a Chocolate Custard Pie* Both with homemade Pie Crust and topped with Oven Golden-browned Merraigne. (Beaten egg whites with sugar - metal bowl - cold - with a pinch of Cream of Tartar to help it *Fluff Tall and Peak!* My parents had these in their restaurants and folks *Loved our Pies* and our *Broasted Fried Chicken* and *Daddy's Slow Hickory Smoked BBQ!* Dad invented his own Wicker's Marinade Vinegar Sauce - way before Wickers. I often wonder if someone used his recipe. People came from 3 state area to purchase his BBQ by the pound - he made that perfect Restaurant Slaw that goes so well with Fried Chicken or BBQ ! Has nboth mayo and Vinegar, little sugar, salt - and most Impt - Milk. I saw a recipe on UA-cam for Restaurant Slaw - Cabbage and onion and the ingredients above - some folks use lemon juice, but Dad didn't. The only think I add - only when having w/pork, is celery seed. Less is always better - YUM! I miss my Parents. ❤
i may be wrong, but i first remember "impossible" pies associated with Bisquick(tm) baking mix in the late 60s - early 70s. it was also the era of jello 1-2-3 desserts which separated into 3 layers with just one packet of mix. not sure if they're related, but they both were the same "vintage" lol. (geez, i'm old!)i've been clipping recipes since those days, and in my recipe box, i still have some old magazine clippings of recipes for things like "impossible cheeseburger pie" or "impossible apple pie" - and the common thread was leavened flour -aka Bisquick(tm), plus eggs and milk, plus whatever filling desired. the flour mixture sinks to the bottom, the eggs form a nice custard, and the other ingredients sort of sort themselves depending on their density. so easy to do in just a bowl with a spoon, and so yummy! i actually made a "ham, swiss and spinach quiche" version a couple of weeks ago, but one word of caution - do remember to grease your pan! i forgot and had to really scrub to get my pie pan clean again. p.s. i love when baxter notices rick in the ending shots! he was just casually trotting along, then suddenly pricked up his ears and looked straight at rick and the camera! such a gorgeous boy! please give him a "scritch scratch" from me!
Kali Dallas Until you mentioned it, I had forgotten about the jello dessert that separated into three layers. I used to like it. Yes that era seemed to have a lot of quick and easy food.
Thank you for sharing your baking experience. I like your recipe. Personally, I would prefer (if I have the time) to use fresh coconut. I buy fresh coconut rom the market, shred it myself, and toast it myself. I find using fresh coconut adds a lot of compliment to the pie.
Thanks for sharing this recipe. This use to be my mother's favorite dessert, when we were growing up, and it was a part of our standard Sunday dinner, until she removed it a little too soon from the oven and the custard spilled on and burned her leg. From that point forward, we had the store bought version and it never tasted as good. I am definitely going to try this recipe.
Thank you Stephanie, that coconut pie really looks great and delicious. I'm certainly going to try it tommorow. I'm watching all the way from South Africa.
This looks SO lovely! I seem to remember my mom making one so similar in the 60's or 70's, now that you mentioned it. I haven't made it yet, but fully intend to. Thanks for sharing another doable recipe.
Thank you for sharing the way you demonstrate how to make was so encouraging for someone like me who can not bake . Thank you I baked it everybody love it .
I made this pie yesterday and as a 61 year old man with no baking experience, I must say it came out great. Maybe my baking career is just beginning. Thanks for the video

just finished baking this about an hour and a half ago...the house smells good and it tastes great...
grarycat1984 oh my god now i wanna make it so bad 😭💕
I love the way you say, easy to understand. I try to bake this pie today. Thanks from big fan in Thailand.
I made this on Easter Sunday for my family get together and everybody enjoye it, it's such a delicious pie thank you for the recipe.
I just made this pie, just used 1/2 cup sugar. I hope it will taste good. It smells yummy! Can't wait to try this!
Cindy Yan how was it
It was delicious, but the bottom came apart when I served it. That was the only complaint I have, otherwise, it's yummy, I made it twice already, can't wait to make it again!
I made this a few weeks ago. Loved it! Thank you for the recipe. Note: I used coconut milk as well and it works well.
I just baked this pie and it turned out beautifully. I used 1 cup of whole milk & 1 cup of coconut milk. It gets a 'thumbs up' from me!
This was so easy and the best version of this I have ever tasted. THANK YOU SO MUCH FOR SHARING. Perfect recipe Yum
The recipe I use calls for self rising flour so no need for baking powder or salt. My whole family loves it! I made four pies on Thursday for my adult daughter tie give to friends. Eat it a little warm and enjoy!
From Japan, I always see your cooking happily♡
Thank you for presenting this delicious recipe. God bless you

Made this pie. The top layer 😊😊❤❤ got a little browner on the top but it really enhanced the flavour. Will make again. Thank you for the recipe.❤😊
Very interesting and delicious recipe. I can't wait to try it. Thanks for sharing!
Thank you so much Stafeny. You always safe me with your delicious recipes...I will try it soon...lots and lots of thanks.
It looks really good, and it's simple enough to make. I am generally distrustful of people who put sugar in cornbread, but I'll trust you on this. Gonna make this pie VERY soon.
Over this weekend, I made this. KING ARTHUR self rising flour is what I used and I used a can of
COCONUT MILK.
Needless to say, it was EASY AND DELICIOUS❣ By Monday, it was gone!
I'll be baking this COCONUT PIE, often👍 Thanks again for this GREAT RECIPE❣❣❣
I love that you gave Metric measurements for this. Makes it much easier to understand for an Aussie like me.
I made this pie using cocnut milk instead of regular & melted coconut oil instead of butter came out perfect & delicious
Gogo Yubari Thanks I was wondering because I'm lactose intolerant but I love Coconut pies.
Gogo Yubari thank you! I was wondering too as i cannot have milk.
I use coconut milk, coconut flour, and Truvia to make it keto-friendly.
*Great dessert*
Tastes like Coconut Custard - which is my standard "from scratch" signature Pie.
*Popular in the South - Old South -as is a Chocolate Custard Pie*
Both with homemade Pie Crust and topped with Oven Golden-browned Merraigne. (Beaten egg whites with sugar - metal bowl - cold - with a pinch of Cream of Tartar to help it *Fluff Tall and Peak!*
My parents had these in their restaurants and folks *Loved our Pies* and our *Broasted Fried Chicken* and *Daddy's Slow Hickory Smoked BBQ!*
Dad invented his own Wicker's Marinade Vinegar Sauce - way before Wickers.
Less is always better -
YUM! I miss my Parents. ❤
Made this for my daughter-in-law who is a coconut fanatic, and she loved it. And everybody else BTW!
i may be wrong, but i first remember "impossible" pies associated with Bisquick(tm) baking mix in the late 60s - early 70s. it was also the era of jello 1-2-3 desserts which separated into 3 layers with just one packet of mix. not sure if they're related, but they both were the same "vintage" lol.

That coconut pie... it looks so moist and delicious Stephanie!!
Moist 😂
Thanks for sharing this recipe. This use to be my mother's favorite dessert, when we were growing up, and it was a part of our standard Sunday dinner, until she removed it a little too soon from the oven and the custard spilled on and burned her leg. From that point forward, we had the store bought version and it never tasted as good. I am definitely going to try this recipe.
This looks delicious and so easy to make!!!! I'm trying this recipe tomorrow, thanks as always Stephanie!
In Brazil it's called bolo de fubá, when made with yellow corn flour, similar to polenta flour. You can also add some cheese. Delicious!!
Thank you Stephanie, that coconut pie really looks great and delicious. I'm certainly going to try it tommorow. I'm watching all the way from South Africa.
This is so amazing pie ! I make many times in this week my husband he love it.thanks for share!
Hi Stephanie, I've tried this with soy milk and coconut milk, they both turned out really nice :-)
This looks SO lovely! I seem to remember my mom making one so similar in the 60's or 70's, now that you mentioned it. I haven't made it yet, but fully intend to. Thanks for sharing another doable recipe.
what a great simple recipe. thanks so much for posting.
This is so easy, I have made it for several get togethers. Even the hard to please ones are impressed 🤗 you are one of the best💙💕
Thank you for sharing the way you demonstrate how to make was so encouraging for someone like me who can not bake . Thank you I baked it everybody love it .
I have been making this pie since I was a teenager. One of our favourites. Recipe was often found on the back of the Bisquik box.
