Dear Mrs. MeMe, I've just subscribed to your channel, and I'm really enjoying your content! My family and I live in Spartanburg. My father is a retired minister. Received your cook recently and told my daughter we need to make this for Thanksgiving. But after watching your video, I think we need to make this pie this weekend. Just love watching you. You make me smile.
Sorry about the commenting again-I should have waited until I watched the entire video, but I couldn’t wait! The story about taking your family’s meal to another family just touched my heart and resonated with me. You just don’t hear of that ever happening these days! What a lovely example of God’s love to your children. My Dad pastored a church so we were very acquainted with sharing meals with anyone who showed up, also giving up Christmas presents to other children when they popped in unexpectedly Christmas Day. And you know, I didn’t love it then but I’m so thankful for my upbringing now. Thanks for letting me share that memory.

I just got your book last week and I just so happen to have a bag of coconut from Thailand! I'm making this pie sometime this week for my husband! Thank you MeMe!
She just told you to use Baker’s Sweetened Coconut. Don’t ruin it with anything else. This lady uses Wal-Mart brand things very often. When she says she specifically recommends a brand, please believe her. She is right about those things. Duke’s mayonnaise, Egg Land’s Best eggs are among her other recommendations.

I love coconut but my family does not. This was my daddy's favorite pie. I had to watch you make it. My daddy would bore a hole in the coconut and drain the "milk" for Mama's recipes. She grated the coconut so it would be fresh. I can still see them working together.
I’m from the South, now living in the Poconos (yea, this Tallahassee Lassie went backwards in her golden years! 😂 Actually, because of health issues, I prefer the cold and snow over the heat. You can always pile more clothes or blankets on; but there’s only so much you can properly take off, so.🤷🏼♀️) I found your channel searching for a coconut custard pie that I MIGHT be able to improvise the coconut custard-to use in steamed buns. I make a lot of Asian food, mainly because friends and neighbors are always asking-our small town doesn’t have any Asian restaurants. It’s a long story of how I got into Asian cooking, but it began with my wonderful Vietnamese foster sister, (the 70’s were a wonderful time to be a teenager! 😂). My precious late son also spent many years in Asia, working and just traveling. Anyways, my girls fell in love with dessert steamed buns, but one doesn’t like the red bean paste and she’s also lactose intolerant. The only coconut custards I could get from friend’s in Asia were VERY heavy on dairy-the main one most people use over there-ONLY WHOLE milk is to be used. I’ve tried a couple of things, but none have worked, or cooked thick enough it doesn’t ooze out of my buns before they’re steamed. I’m going to play a bit with this recipe and see if I can’t finally make a thick enough custard. Thank you! PS My girls are trying to get me into a Senior Apt complex in Buffalo..yea, even farther north than the Poconos-AND more snow. My youngest now lives there and her husband and his family have fallen in love with our southern cooking recipe’s. She teases that once I get up there, I’ll be cooking constantly. As much as I love to cook, I think I’ll just share your channel! 😂

This looks amazing!!! I absolutely love watching you and hearing KK going "mmm hum" in the background! I live in Columbus Indiana and need to get your cookbook! I have watched you make so many amazing things people around here make for potlucks (but yours looks better) you also remind me of a great lady that I learned so many things from about how to cook and bake (RIP Peggy) ❤
Awesome! Thank you!

As promised, I made this pie today using homemade crust. I think I can say it’s my favorite of all pies. So sweet and vanilla-ey. And I love coconut! And, this pie would be wonderful with chocolate chips added to make a Mounds candy bar pie.
So glad you enjoyed!! Homemade crust sounds delicious!

I enjoy following along with your recipe book, sometimes making notes. On the page (82) just before this recipe you shared a special comment that made my heart soar: "Praise the Lord: the tomb is empty and my heart and table are full. -- MeMe" Thank you, Diane, for your faithfulness to Jesus, ❤ and for sharing your recipes and life stories with all of us. ❤
