Every time I have done a ganache drip, I've had minor problems. It either sets up too quickly leaving unsightly lumps (which I re-melt with a small torch) or it separates as I am putting it onto the cake. What do you suggest I can do better with the ganache to prevent these problems? You are the drip queen! You make such lovely drip cakes.
Hi lovely! The separating ganache problem used to happen to me when I over-mixed the ganache or stirred too vigorously. Good call on the small blow torch by the way, that's a really great tip! I am wondering what your ratio is for choc and cream? For the white choc drip I add 1/3 of the weight in cream. I also added white white icing colour to the ganache, which makes it white and also thickens it up every so slightly.

So beautiful! Question: can a cake with a softer crumb be used for tiering if dowels are used? Or does the cake have to be firm? I prefer soft, moist cakes. I know the firm cakes aren't necessarily dry, but the softer crumb is my preference.
Firm cakes like mud or butter based cakes would be best :) sponge cakes are very delicate and cake move around, sink and misshape easily, especially when under weight / pressure.

HI Laura, thank you for your lovely comment! :) Yes it does. It still remains a tad soft, but after it sits in the fridge for about 2 hours it does harden up enough to paint. If you prefer super hard drips to paint, I would recommend using white chocolate mixed with vegetable oil. This also works a charm and is easier to paint over.

I’m having a hard time finding “food safe” floral wire like the one you used. Wilton makes one but it’s wrapped in paper and people say the paper falls off. Please let me know where you bought yours. Thank you! I am a new subscriber and I love your channel!

Hi love this cake so much! Just a quick question.. can’t i add the lustre dust into the airbrush? I wanted to use glitter onto my cake but i don’t have an airbrush machine. Would i not be able to just pour the rainbow dust non toxic glitter on the airbrush and spray it?
Hi Nadia, I personally wouldn't recommend popping the dry powder directly into the airbrush- It could potentially clog your gun and thats always a messy situation. Blowing the dust directly from the container would be your best bet, unless you used a glitter pearlescent spray made specifically for airguns. Americolour has this :)
