How to make tteokbokki Korean street food style

- The #recipe featured in today's #cookingvlog is for a vegan, plant-based tteokbokki, street food style:
2 lbs Korean ricecakes (tubes, fresh or frozen)
1 tbsp sesame oil
salt & pepper
1/4 onion
1 shiitake mushroom stem
2 tbsp soy sauce
2 squares dashima
1/4 cup gochujang
2 tbsps gochugaru
1 packet instant ramyeon broth
1 tbsp maple syrup (or your favorite sweetener)
1 tbsp toasted sesame seeds
Marinate the ricecakes in sesame oil, salt, and pepper. In the meantime, add 4 cups of water, onion, mushroom stem, soy sauce, dashima (dried kelp), gochujang, gochugaru, ramyeon broth packet, and maple syrup to a large pot. Bring to a boil and cook for around 5 minutes, until fragrant. Add the marinated ricecakes and cook on medium heat until tender and the sauce thickens (about 10 to 15 minutes). Remove from heat and garnish with toasted sesame seeds before serving.

If regular tteokbokki is too spicy for someone can you just reduce the gochujang and the gochugaru amounts, or do you then have to add something else to replace the lost flavors that come with the chili?

I tried some from a local asian market, and I can't recommend ttebbokki enough. I tried it because Doobydobap had a period of posting a lot of it. Your channel has gotten me a lot more into korean food too. Not a vegan or vegetarian but as much as I eat trying to cut out some calories and fat. Still love a good steak or chicken or pork.

The food you cook always looks absolutely delicious. I enjoy learning about the background or history of each dish. But I won't lie I've been pretty intimidated about making this particular dish as well as Japchae. But you make it seem like I can actually make this and it taste good. I like that though.

They make milder versions. You may have to look at the ingredients and decide if it would aggrivate your bowls. Not all asian food hotter than lava.

Ketchup tteokbokki is good, too. I've eaten it at a stand close to a Korean primary school. Many kids prefer this slightly sweet version since they cannot handle the heat of the normal version (yet).

does anyone know where i can buy ramyen powder? i loved those noodles but i found out i cant tolerate gluten, so not only am i upset about not being able to eat delicious noodles anymore (yeah i know they also make other types of noodles but the instant ones are not as good, and the good ones dont have powder)
i also cant even get the flavor of my favorite noodles....

I use ssamjang in some of my recipes that calls for gochujang. Cuts the heat a bit. I think it’s vegan.
