Omg this looks so good! In Korea, we eat kimchi and cheese together a lot of the times! We add shredded mozzarella on kimchi fried rice, and you know, there’s kimchi taco, kimchi cheese fries, kimchi mac and cheese etc etc

I finally made nacho cheese sauce when I made the taquitos from the cookbook and holy crap my life is changed! I'm a vegetarian trying to eat more vegan and I have tried other vegan cheese sauces before that were not nearly as good. I can't wait to make it again and use it for some mac and cheese :)
Emmy Richards nice one. Keep your eye out for new vegan cheeses because they are coming out all the time and getting better. There is even a vegan cheese recipe book, the whole book is just vegan cheese, I saw it with a guest author on The Happy Pair UA-cam channel.
Kimchi and cheese absolutely play nice together! Make yourself a grilled kim-cheese sandwich sometime, and you'll see what I mean! So good. Throw in some tempeh or shiitake bacon if you really wanna get crazy
Dude...cheese and kimchi absolutely go together!!!!!!! Cook the kimchi *yes, cook!! It with some butter and cook the cabbage through and make sure you use the kimchi juice as well. Sprinkle in some cheese and eat it over fresh white rice...my childhood right there :)
