I never really liked eggplant but recently I've been OBSESSED. My favorite easy way to cook it is cubed, tossed with olive oil, curry powder, garlic powder, salt & pepper and then roasting til it's caramelized and soft. It's perfect!!! Highly recommend.

I have a love/hate relationship with eggplant since I was little girl (problems if you grew up in a Indian household).... but NOW I LOVE EGGPLANT incorporated into other dishes besides Indian cuisine for some reason! Thanks god! I went grocery shopping and I brought eggplant! Kitchen here I COME!

Made this and it was delicious! Changes made: Used vegan ground beef crumble stuff instead of lentils (used more seasonings than stated... everywhere lol) Our eggplant didn't get dry so it was hard time cutting it when cooked but it was still good Used lemon juice and nutritional yeast in our tofu instead of apple cider vinegar (doubled the tofu ricotta cause I like lasagna cheesy) Got lazy and didn't roll the eggplant and just layered like traditional lasagna Made about 6 servings

Great recipe and video. Good idea to use Eggplant, it makes a change from standard lasagna pasta. I don't mind doing the preparation because the end result is worth the effort.
I love lasagna. Thank you for a different way to make it. I want to use eggplant more often but never had any recipe ideas for it. I’ve had sushi at a Japanese restaurant where they grilled it with sweet eel sauce (sweet soy sauce) and top it over sushi rice. The delicate texture resembles grilled mackerel or tuna!! Yumm!!
In the Caribbean we cut it in cubes and soak in water to get rid of most o fthe seeds then fry it up.with tomato paste, onion tomatoes and garlic..some soy sauce, seasonings and add water to make a stew. Goes great with rice.

I used to hate eggplant too but now i love it because it can get soft and gooey. So eating something like a thinly layered eggplant parm is sooo delicious because everything is saucy and soft :P
I hate pumpkin/squash and sweet potato but eggplant is amazing; as I have started to eat more plant based I make eggplant parm now instead of using meat and its fantastic. I can honestly say I don't miss the meat and in someways its richer if that makes sense. Great video!

Do you think the eggplant noodles will end up with the same texture if they've been thawed from frozen before baking? Wondering if it would counteract the step of letting the eggplant lose water.

I recommend that you grill the eggplant slices first, but your recipe sounds delicious. I am going to make this dish for sure.

I’ve made the tofu cream cheese 3 times already and love it. Great in sandwiches and even turned it into a creamy pasta sauce.
