  • Follow me on my weight loss journey and see what I eat in a day on a vegan low fat high carb plant based diet. I follow Dr. McDougall's Starch Solution and Maximum weight loss plans including 50/50 plate whenever I can.
    In this week's video, I show you three delicious meals suitable for weight loss: Sweet potato, ginger and turmeric soup; Black bean stew and Jollof rice. These meals are low fat but will keep you full and satisfied as they are full of fibre and goodness.

    Sweet potato, ginger & turmeric soup (serves 3 - 4 people)
    1 onion
    1 pepper
    1 sweet potato
    1 tsp turmeric
    1 tsp garlic powder
    1 tsp smoked paprika
    2 stalks of celery
    Half of onion
    Thumb size piece of ginger
    1 vegetable stock cube
    1/2 tsp turmeric
    Black paper to taste
    Black bean stew (serves 3 - 4 people):
    2 red peppers
    1/2 onion
    3 cloves of garlic
    1/2 tsp all purpose seasoning or salt
    Can on black beans
    1 tsp smoked paprika
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    2 bay leaves
    1/2 can of tomato
    Fresh coriander
    Jollof rice (serves 2 - 3 people):
    Red pepper sauce:
    1/2 red bell pepper
    1 long sweet red pepper
    1/4 scotch bonnet (or per taste)
    1/2 red chilli
    3 cloves of garlic
    1/2 onion
    2 small tomatoes
    Small thumb size piece of garlic
    1/2 small onion
    1tbs tomato paste
    1 tsp curry powder
    1 tsp all purpose seasoning or 1/2 veg stock cube
    1/2 tsp pepper
    1 tsp thyme
    1 bay leaf
    1 cup of washed basmati rice
    1 1/2 cup of water
