The phí trường and nhà thương word is a southern dialect thing, not a Huế dialect. After the war, northern dialect become more popular and enforced so used northern vobaculary. Whereas people who immigrated right after the war still uses the same old words whereas people who stayed in VN, the language evolved
He’s just being thoughtful about his words and most likely is more casual around a smaller group of people. But even if he isn’t and is more formal that doesn’t matter. He’s at least authentic and is building a company and hiring people so they can make a living too

I am Vietnamese born and bred and I still use these South vocabularies in my conversation. That's the South vocabulary before the war. When the war ended, the new boss of country has a tendency not to use vocabularies used by the South. In the last few years, independent news channels and even government TV use South vocabularies like: English North South Helicopter Máy bay lên thẳng Trực thăng Aircraft carriet Tàu sân bay Hàng không mẫu hạm Astronaut Phi công vũ trụ Phi hành gia
