Whipped caramel: the fantastic and mouth-watering mix!

  • INGREDIENTS
    260g (1 ¼ cup) sugar
    70g (¼ cup) butter
    200ml (¾ cup + 1 tbsp) full-fat cream
    METHOD
    1. In a small skillet with a thick bottom, melt the sugar over medium-low heat until it is a deep caramel color. Do not stir. It should take around 10 minutes.
    2. Add cold butter and mix well, then pour in cream and mix for 2 minutes.
    3. Pour caramel into a bowl and chill in the fridge for 15 minutes.
    4. Remove from the fridge, give it a quick 15 seconds whip it with a mixer and put into the freezer for 10 minutes. Finally, remove the caramel from the fridge and whip it once more until it becomes pale and fluffy.

    Every time I tried this method, I burned the sugar🤦
    So I put all ingredients in pan at once, melted together, then boiled for 2 minutes, then stirred for 2 minutes off heat
    Then fridge for 15 minutes, then freezer for 30 minutes.
    Then whisked light and fluffy and delicious 😋
    I used brown sugar

      That is butterscotch sauce then

      Butterscotch sauce is made of brown sugar and all ingredients are mixed together

    Do you take it off the element to mix the cream? Is the cream heated before hand or is it room temperature. So much information missing.

    I followed each step very well in the video but i didn’t get the same result i got something like melted caramel candy and not a fluffy cream ! What do you thing the problem is 🤔

      Did you let it cool over night? I made the same mistake. Leave it in the fridge overnight so it gets hard

      ⁠@@nisa-pm1xrand did it actually whip up like this recipe shows in the video once you cooled it overnight? I’m convinced these videos showing this technique are mostly clickbait and they’re adding some kind of stabilizer.

      Not clickbait st all-- mine definitely whipped up to be light and fluffy. I cooled it in the fridge for about 4-5 hours. It tastes sublime.

      But it says 20 minutes in the freezer 😮
