The Easiest Homemade Cinnamon Rolls Made without Yeast

  • These no yeast cinnamon rolls are the easiest homemade cinnamon rolls you’ll ever make. With no dough-punching & no waiting for the dough to rise, the hardest thing about these cinnamon rolls is waiting for them to come out of the oven!

    Ingredients
    Rolls
    2 cups all-purpose flour (240g)
    3 Tablespoons sugar (38g)
    1 Tablespoon baking powder
    1 teaspoon salt
    5 Tablespoons cold unsalted butter, + additional 2 Tbsp butter for baking
    ¾ cup milk (178ml)
    Filling
    ⅔ cup brown sugar (133g)
    3 Tablespoons white sugar (38g)
    2 teaspoons cinnamon
    4 Tbsp butter melted
    ½ teaspoon vanilla extract
    Icing*
    3 oz cream cheese softened (85g)
    3 Tablespoon butter softened
    1 teaspoon vanilla
    1 ½ cups powdered sugar (190g)
    1 Tablespoon milk (15ml)
    Instructions
    00:00 Introduction
    00:35 Preheat oven to 375F
    00:40 Combine flour, sugar, baking powder and salt and mix.
    01:06 Using a pastry cutter (or fork and knife if lacking) cut 5 Tablespoons of butter into dry mix
    02:10 Add milk and mix until all ingredients are combined.
    02:30 Dump dough onto a very well floured surface and roll until it forms a cohesive ball. Continue to flour the surface you are working with as needed.
    02:50 Use a rolling pin to roll dough out to roughly a 10x12" rectangle.
    03:33 Make your filling by combining brown sugar, sugar, and cinnamon and then stirring in butter and vanilla. This will be very much like a paste.
    04:07 Spread the filling over the rectangle of dough, leaving about ¼" of space as a perimeter around the filling.
    04:22 Carefully roll dough starting with one of the 12" ends and rolling tightly. Press the edge of the roll into the dough so that it sticks.
    04:33 Place the reserved 2 Tbsp of butter into a 9" pie pan and set it in your preheating oven for a few minutes until the butter has melted. Remove from oven.
    04:50 Cut the log, spacing your cuts about 1" apart. If the log is not holding its shape well, transfer it to your freezer for about 10 minutes and then try to cut again (it should hold it's shape this way so you will have mostly round cinnamon rolls).
    05:03 Place your cinnamon rolls in baking dish, they do not need to be touching, they will spread to fill their surrounding area.
    05:28 Bake on 375F for 28-30 minutes (beginning to lightly brown around edges). Prepare your icing while the rolls are baking.
    06:21 With mixer, combine cream cheese and butter and vanilla.
    05:52 Gradually add sugar, scraping down the sides of the bowl as needed.
    07:09 Add milk, stirring until combined.
    07:23 When cinnamon rolls are finished, remove from oven and allow to cool for 5 minutes before spreading icing over rolls.
    07:35 These cinnamon rolls are nice and soft. Keep in mind that the warmer they are, the harder it will be to separate one from the other. But if you go in for one cinnamon roll and end up with one and a half, it's really not the worst thing that could happen, right?
    Notes
    *This recipe makes a lot of frosting! If you don't like much frosting on your cinnamon rolls, feel free to cut it in half.

    When I was in college I was craving cinnamon rolls but didn’t have any yeast and came across this recipe. Years later and I’ve made these cinnamon rolls multiple times. This recipe is soooo good!!! These cinnamon rolls are easy to make and soft and delicious. I recommend everyone try them!

    I was so skeptical of this recipe because it seemed too simple, but boy was I wrong! I made these with my the year old earlier, and they turned out incredible! Such a good recipe!

    Thank you for this recipe.
    I use my bisquit dough for pizza for very young family and or very old guests. Especially older relatives whom love pizza yet can not chew regular crust.

    I just made these and they were very good. I went easy on the icing because the filling is super sweet. It's perfect for a cinnamon roll fix when you don't want to do the yeast version.😋TYSM for sharing.💗

    Girl o my gosh I didn’t even try it yet but I’m making this for my siblings and there is no yeast at home and finger crossed 🤞 it works but I have a great feeling that it would work 🤞

    I d love a video on the kitchen tools that feel are necessary. When I bake I feel like I don't have enough of what I need but don't want to go overboard with pans and spoons etc etc. Also recommendations too!! Looks great, can't wait to try

      I will definitely add that to my list. It could be very helpful. Thank you so much for the suggestion, but honestly I am the worst person to ask for this. You should see my drawers. There are spatulas and spoons sticking out everywhere. I have bowls galore.     Ok so I made them but i could barely roll it cuz it was so sticky. So I just did the best I could and I still considered it fresh bread with cinnamon and sugar and I topped it off with the cream chz frosting. Omg it is still so good. But next time I'm just gone use the pull apart monkey bread method. Lol. Just kind of form the dough in balls and bake it. I'm certain it's still gonna come out good. 😋😋😋 I'm looking 4 more bread recipes without yeast cuz you can enjoy bread recipes without waiting for yeast to rise. I don't hv time for that....lol

    Just made these everyone really liked them. My only mistake was serving them too soon the did fall apart but they were too busy eating to really pay attention lol. 🤣 So she's right let them cool a bit after you frost them.

    i was looking for a no yeast cinnamon roll recipe and this one looks perfect! but i’m just wondering if i could bake this in the air fryer because our oven currently isn’t working the best.

    Mine turned out great but your video says to use 3oz of cream cheese and 3 T butter, the written recipe calls for 1oz of cream cheese and 1 T butter

      The increased proportions are just for more icing. :) You can use the lesser or greater amount depending on your preference. :)

      The icing definitely adds a nice touch and I don't think they'll be as good without the icing but you can do it.

      I wouldn’t recommend it for the rolls. There’s a chance it could work in the frosting but I’d be hesitant to try it. 😔

      You would need to make adjustments for self rising flour and without having tried it I can't say for sure how it would work. :(

      I would try substituting a non-dairy milk, like almond milk,for the milk in the recipe. I really like Elmhurst brand. nut milk is not always as thick as whole milk so you may need a bit less than called for in the recipe. I hope that helps!

    i'm so confused, literally not a single recipe i've ever tried of cinammon rolls comes out as in the videos, digital scale, measuring cups & spoons & it still turns out way too soft/paste-ish compared to the dough everyone single youtuber shows for the rolls. Whenever i try cookies or brownies things go well but cinammon rolls are literally a nightmare in my kitchen, yes they're edible but they never ever come out as they're supposed to & idk what to do anymore
