CAN YOU FREEZE FRESH KALE & COLLARDS ?

    To Freeze Fresh Kale and Collards
    ---------------------------------------------------------
    1. Wash and rinse your greens
    COLLARDS:
    2. Spread out the leaves and cut out the tough stalk
    3. Cut each leaf in half and stack a few half-leaves
    4. Cut into squares or however you prefer
    5. Place on a parchment-lined baking sheet/pan
    KALE:
    6. Strip out the tough stalk in the middle
    7. Tear into small pieces
    8. Place of a parchment-lined baking sheet/pan
    FOR BOTH:
    9. Place pan in the freezer either OVERNIGHT or FOR at least 5 hours.
    10. After freezing, bag your greens and place them back in the freezer for use later.
    BLANCHING:
    11. Boil water in a large pot. After step 4 for COLLARDS and/or step 7 for KALE, place your greens in boiling water for about 30 seconds, remove from the boiling water and place in ice water bath to stop the cooking.
    12. Shake off excess water and let the greens dry for about 1 hour or more on towels to get rid of more water.
    13. Bag your blanched greens for use later.

    Thank you Berta. I lost my mother while I was still serving in the Navy and she was the most accomplished canner and preserver I had ever known. Then early last year we lost my wife's mother, and I never took the time to learn from her. So if you don't mind, mom, I need to learn how to preserve the produce of my garden.

    Frozen Greens Rock! 🥬 I always watch until the end because the music is light hearted and I enjoy it. I love how you have your kale in jars around your kitchen. I know that’s how it should be stored in the refrigerator. But it also gave me some ideas for my next flower arrangement. 😊🌺

    I’m like you, lol, don’t want a lot of work involved. For my greens, after I wash and spin them in the salad spinner, I just put them in a bag, like a cup each for my smoothies, and put them in the freezer, that’s it. Sometimes I go ahead and put the fruit in there too and just get a bag (like the gallon tie bags) and put the ingredients in there and then just put them in my blender when I’m ready for a smoothie. Much easier than having to gather the banana, orange, or whatever other fruit or berries I’m gonna use, its already together.

    I love, love, love kale and collards, and recently purchased 32 ounces of these beautiful and plentiful greens. I was trying to come up with an easy way to freeze without going the par-boil route, you read my thoughts . Now I can hardly wait to try your method on my next purchase.     Thank you for the video. Just discovered your channel yesterday when I was looking for how to make Maple Sugar. I am from East-Friesland, the most north western corner of Germany, close to the border of the Netherlands. Kale is by far our national dish. Normally we eat it during winter as Kale needs to get frost.The frost will turn the starch into sugar. As Kale can be bitter, the sweetness takes away the bitterness. Some people would also add sugar to Kale once its cooked. You serve kale with spuds and smoked sausages or a sort of smoked gammon steak (Kassler, very german). Kale is very popular in north Germany, but also England of all places.
    I love Kale so much, I eat it all year round. Again, thank you for your channel.

      Hello Hanno! My mother's family is totally German on both sides - my cousins have traced our ancestry back to Germany in 1600s - my great grandfather came to the US from a town on the Dutch border called Bocholt in 1854 - & I grew up eating many German dishes. We had kale all the time too - and that's back in the 50s & 60s when kale as a vegetable was largely unknown here. Your comment made me remember all the good recipes my aunts & grandmothers made with kale. Thanks for posting it & stay safe & well!! 🇺🇸🇩🇪

    I always freeze my kale, collards, etc. because I love, love savory oatmeal for breakfast.

      @@bertajay I use steel and whole grain oats, smoked paprika, turmeric, pepper, kale (and or spinach, collards).. Add water and cook. Then I add flax and sometimes imitation bacon (soy). I got this (General) recipe from Ann Esselstyn :)
      I’ve also made it with oat groats. I keep them par-cooked and frozen.

    Hello, Berta, dear friend. Frozen greens do indeed rock! I always keep some spinach in my freezer, but this is a much better way of a) having a variety of greens, and b) having organic, locally grown produce in my freezer. So THANK YOU!     Frozen 🥶 Greens 🥬 Rock 🪨! Yass and thank you Berta Jay! I just purchased 8 lbs of turnip greens from the farmers market with the intention of freezing them and now I have a quick simple way to do it in addition to blanching them!     Berta - is there an advantage to blanching the kale, collards or whatever BEFORE freezing them? If not, I think you have the right idea - LESS WORK TO DO! Unless the greens are somehow better to use after being blanched, I say - just freeze 'em!! PS - FROZEN GREENS ROCK! Have a great week & stay safe & well!! ❤️🥕❤️

    Hi Berta Jay, Once frozen, how long do the greens stay good? When I worked on navy ships (not a sailor, did work while underway) there were a lot of frozen greens and it only took a couple of weeks before they got slimey and gross. I'm guessing that kale and collards hold up better because they're really tough.

    I have a lot of mustard coming in, I wash and then parboil ~transfer to bowl sitting in a sink of ice water
    ~ as soon as they are cooled enough to not melt the bag, 😝 freeze. Take it out of freezer and my cast iron skillets are ready to make magic😎 this will be great for spinach!
