PA DUTCH CHICKEN CORN SOUP

- This is probably the most comforting soup! I like it even better than chicken noodle! And it is one of the most common you will find at church and fire company fundraisers to take out and for sale at Amish stands. Easy, delicious, and satisfying as is much of PA Dutch food!
PA DUTCH CHICKEN CORN SOUP
INGREDIENTS
2 tablespoons olive oil
1 onion, chopped fine
1-2 celery stalks, chopped fine
1 bay leaf
1/8 teaspoon saffron (optional)
1 quart chicken stock OR 4 C water & Better Than Bouillon 1 TBS
2 cups milk
1 -2 lb chicken meat, I prefer thighs for the flavor
2 cans whole kernel corn drained
2 cans creamed corn
3 eggs, hard-boiled and chopped
1/4 cup fresh parsley
salt and pepper to taste
2 tsp sugar
INSTRUCTIONS
Heat olive oil in a large, heavy-bottomed soup pot or Dutch oven.
Saute onion and celery until onion is translucent, about 5 minutes.
Add chicken and brown.
Add bay leaves, saffron, stock, water.
Bring to a boil, then reduce heat and simmer for 20-30 minutes. Remove chicken to cool slightly. Add both corns and continue to cook soup at barely a simmer.
In about fifteen minutes, shred chicken, and return to pot.
Continue cooking for another half hour to an hour. Remove bay leaves, and add eggs, parsley, sugar, and salt and pepper to taste during the last 10 minutes.

OH MY, USED TO LOVE THIS IN LANCASTER DECADES AGO......BUT DEVELOPED DIVERTICULOSIS AND CAN'T EAT CORN. SENT RECIPE TO MY FAMILY.😚😚😚
What if you used just the creamed corn? My mom has that too and has been able to have it that. Hope that helps!
@@PennsylvaniacookingBlogspot CREAMED CORN STILL HAS CHUNKS OF CORN IN IT, SO THOSE WOULD BE ABLE TO STAY IN THE POCKETS ALSO AS THEY DON'T DIGEST WELL. THEN EVENTUALLY WOULD CAUSE AN INFECTION TOO. I JUST CAN'T TAKE THE CHANCE, THE OPERATION TO REMOVE PART OF MY COLON WAS HORRIBLY PAINFUL. I LOVE CREAMED CORN!!!!! THEY HAVE CHANGED THE FOODS TO STAY AWAY FROM OVER THE YEARS, BUT I WILL STICK BY THE OLD RULES. PEANUTS WERE FOUND AS THE CULPRIT IN MY POCKET. WITH THIS DISEASE, STAY AWAY FROM PEANUTS, CORN, SEEDS OF ANY KIND (even on top of rolls and in tomatoes), POPCORN (for sure), DRINK A LOT OF WATER AND TAKE CITRACEL FIBER DRINK (not Metamucil, it is gassy). FOUND OUT, IT IS ALSO HEREDITARY, MY ADULT SON WAS OPERATED ON FOR IT 3 YEARS AGO. THANK YOU FOR REPLYING AND GOOD LUCK TO YOUR MOM. 😚😚😚

Ohhhhh… you’re killing me. There weren’t any Amish neighbors, but we had wonderful neighbors who had grown up on farms. I’ve been living alone, but a young man I’ve known a while has moved into one of the spare rooms. He’s from Oregon originally and has lots of questions about the Amish and Mennonites. He is in for education by food.

I'm going to try this recipe, but though she showed the unions, celery, and other ingredients, there were no specific amounts. Like the sugar, how much, etc. Does anyone have those amounts?

To make a better chicken corn soup use creamed corn with whole kernel
People need to get up to date medically. Fat is NOT DANGEROUS. SUGAR IS. KEEP THE FLAVOR. Your doctor is likely behind in studying his nutrition. Did u know MDs have NO TRAINING IN NUTRITION IN MED SCHOOL? RN MSN.
I did not realize that they had no nutritional training. That seems like a major gap! If you don't know how to feed the body well, what good does it do to try to fix it if not fixing a possible source? Sad. Thank you.
If you put egg in the soup and plane to freeze it don't put it in . The egg will get like rubber and that's not good put it in after you reheat it then put it in. Don't use can corn. Try to get fresh corn if you can if not use frozen a much better texture and I don't use cream corn because of the corn skin that gets hard the more you cook it.
