  • This Pennsylvania Dutch chicken corn soup with rivels is a big
    part of my life. I grew up with this soup and I make it quite often.
    There are two unique additions to this chicken and corn soup, the
    rivels and chopped hard boiled eggs. They both add a tremendous
    amount of flavor and texture to this soup.

    Pennslyvania Dutch Amish Chicken Corn Soup with Rivels
    INGREDIENTS:
    2-3 cups cooked diced chicken
    1 cup diced onion
    1 cup diced celery
    1 cup diced carrot
    2 pd bag of frozen corn - or about 8-10 cobs fresh corn
    2 roughly chopped hard boiled eggs
    1 minced garlic clove
    2 tbsp parsley
    salt and black pepper
    2 hard boiled eggs
    12 cups chicken broth - I cooked a 6 pound chicken
    yesterday and this is the broth
    RIVELS:
    1 cup all purpose flour
    pinch salt
    2 eggs
    Mix above ingredients well until blended.
    Drop by fork or spoon into boiling broth/soup.
    In a sauce pan over medium heat add olive oil,
    diced onion,celery, carrots, salt and pepper.
    Cook for 5 minutes until the veggies start to get tender.
    Then add minced garlic and parsley , stirring and cooking for an additional minute.
    Once the veggies are done I'm adding them to the heated chicken broth.
    Add the corn. Give it a good stir, cover and bring up to a simmer.
    Cook for 15-20 minutes.
    Assemble the rivels.
    Drop the rivels in the soup and cook for 10-15 minutes. Add
    cooked chicken, parsley, salt and pepper and chopped hard
    boiled eggs. Stir and bring up to heat. Ready to eat.
    Serve with crackers on the side and additional parsley for
    garnish. Enjoy

    I've grown up eating this for over 50 years (we're from Chambersburg ) my mom puts potatoes in our soup and no carrots or parsley . I live in Oklahoma now and this is perfect for fall and winter meals. When I make it I make alot for family and friends to enjoy . We have friends that make it just like yours and it's wonderful too.

    This is the best recipe I’ve found on UA-cam. I’m planning to make a large batch soon, I have my chicken and my sweet corn frozen, and will make it in plenty of time to have for deer camp! And always, always need the rivels!

    I moved from York, PA for college and I’m just now finding out that people have never tried chicken corn soup. I was so shocked! I’m going to make this recipe for my friends :)

    I always get a couple bowls of this from stoltzfus when I go to the york fair, along with some ham sandwiches, its the best lunch a pennsylvanian can ask for
    I used to live in new Oxford (its on route 30 between gettysburg and Abbottstown and close to Hanover) but now I live in lancaster

    This soup has been served made by my mom a farm girl from Williamsport Pa.....sometimes my mom would make beef rivel made with slow cooked chuck roast...both are so good on a cold day. Great video thanks

    OMG, thankU so much! Whenever I was sick as a little girl, my mom always made this soup and it made me feel 100% better every time! I'm not feeling too well right now and am CRAVING this soup, and I've attempted making it myself 3 times in my entire life, (I'm 38 btw), but the first time I attempted making this, it look like a big loaf of soggy bread on top! I love cooking, however that experience frightened me away from making soups ever since, although my third attempt was a complete success! 15 years ago...cannot WAIT to make this tomorrow! My mommy is from Lewisburg, Pa btw, although I grew up in Harrisburg. Where she'd she's from, there's a huge Amish/ Mennonite population nearby...Looks like almost the exact same recipe, except my mommy used to add rice to it...ThankU so.much again! Cheers to all u happy cooks out there!🤗

    I moved from York, Pa a year ago and cannot find soup like this! We really enjoyed many of the Pa Dutch cooking. Will have to show these Floridians what good cooking is. Thanks for your recipe, I enjoy making it several ways.

    Tess, yes, indeed! I'll say this soup is hearty! I love it! Those rivels do look a lot like dumplings to me, and I sure crave the taste of dumplings! MMM! Every ingredient in this is terrific! Great recipe! Thanks so much for sharing it!

    I've never heard of rivels but I love the concept of these little dumplings.

    South central Pa here... made it pretty much the same except I use my own frozen sweet corn...so much better...plus I roll out rivels about 3/16" thick and then cut them with a pizza cutter into little squares...similar to making slippery pot pie but thicker. Looks much prettier than chunks...

    Tess, I got a free Pennsylvania Dutch cooking book on Amazon Kindle and wanted to know what rivels are. Thanks for the instructions! One of the recipes i read said to put the dough through a colander type strainer and drop the pieces into the dough. Have you ever done this?

      +Laura Carpenter Laura, Wonderful! I believe they are referring to German Spaetzle which is a side dish. You push the dough through a colander and cut off as they drop into boiling water or broth. Then remove and you can toss in a pan with butter or any seasonings..

      right here in the heart of Mifflin County, Pa. the dutch around my area say the bigger the rivals the better.. I so agree... The Pennsylvania Dutch are some of the greatest cooks there ever was

    Nice. I would just reserve some broth/ stock and some corn kernels and whirl them/ mash them to add more thickness/ body to soup overall.

    This is a recipe I have never heard of before. And I have never heard the dumplings called rivels. We just call them dumpling but make them the same way. This soup is definitely going to find its way into my meal plan soon!

    This looks delicious. My mom makes one similar to this except instead of chicken she uses pork and doesn't add the hard boiled eggs. I will have to give your recipe a try!

    Have you heard of Ponhawa the spelling is not correct? My Mother made it after cooking and boiling Pork. she used Corn meal in the water with bits and pieces of pork. let set over night in a bowl, then sliced it in thin strips and fried like potato cakes for breakfast.

      Pon haus. Yes, we also call it scrapple. Usually fry it till a nice crust on the sides and serve with a drizzle of maple syrup on top. It was a part of my childhood. :)

    thank you. I was looking through a "The good housekeeping cookbook" and came across this soup. I was confused on what to do with the rivels. The recipe said that the dough is crumbly and sprinkled into the soup. Your dough is sticky looking.... so I am thinking that you know what you are doing, and I will take your advice

    I remember my grandma would pinch and roll the dough with her fingers into the soup. Ended up the size of spaetzel. I'm assuming her dough must have been a lot drier to do that?
