this relieves me since they passed it and I think I would be better, but I also understand that part of their "not excellent" performance was because of anxiety, and knowing that I'm a really anxious person too I'll just pray that my anxiety won't affect me at all, atleast for once!

How can the interlocutor ask the question " Do you have a favourite sports team " to one candidate then ask the other if he agrees? you cant agree to a personal question , surely the question should be " and whats your favourite sports team" This is not an open ended question , bad example in my opinion.
Sometimes its proper to keep speaking and add more empty extra words, more for the phonetic impact, and sometimes it's better just answering with the fewest words possible. I don't like the first option, cause I'm not very good at it, but it can prevent cringe situations and can help you to look more prepared with your English. So I think everyone should prepare some repertory phrases just to vomit them in the speech, to impress more the listener.

For those who feel the interlocutor(examiner) is being too rigid, there is a reason why examiners have to behave in a certain way. An examiner is supposed to carry out the test in the way that allows examinees to showcase their language abilities without intervening to avoid unfair test results. Normal interaction one gets in everyday conversations should be kept to minimum on the part of an examiner. To add feedback including reactions such as approving smiling, excessive nodding, and frowning brows is considered a factor a disruption to the overall integrity of the test.

At b1 it doesnt matter. They dont even take into account if you are using american words.

A better prompt would be “what about you?”, which is the other option for the examiner

From my understanding the B1 won't necessarily help with any kind of work permit or visa, but it will of course help you find jobs within the UK
