    That's how I do it. My mom said always soak your beans and check for little rocks and broken ones

    Thank you Jeni, I’m glad you shared this. Some people don’t know the quick soak method. I’ve been canning for about 50 years, since I was a youngin with my grandmother. My mom and I would go to my grandmothers all the time to help with canning whatever needed to be canned that day and I loved it Have a blessed day!!.

    Im cooking my northern beans 🫘 now one .. one thing I love about beans in a bag they are grown , don’t go bag I bought northern beans in 2019.. they smell and coming out great , will have them for lunch tomorrow at work ❤😊

    I am new to cooking. Or let's just say I had no idea how to cook these, and your video was of great help! I've watched a few bean cooking vids, and I see that normal tap water is used. IDK if I want chemical tap water soaking into the food I eat?! But then there is this multiple rinsing process which I've read is to rinse away excess salt/sugars? What harm can come from not doing the rinses? I just cooked them and I also rushed the process and only let it soak 45 min. They are quite tough and hoping not to have digestive issues from undercooking. I guess making a big batch so you don't have to do this soak process each night is a good strategy 🤔

    Thanks for showing how to do the quick soak! I usually soak overnight. When you cover them the first time w the water are you using filtered water?

    Great tips for beans. I had thought about canning sausage and peppers together. First I figured something like Andouilli but I'm not sure with the casings and it being frowned upon. Would regular sausage work? Thanks!!!

      Absolutely! You could even use hot and add chili flakes if you like.

    How much would you add if making quart size cause not sure if they will swell up?Maybe 2 cups per qt or is that too much cause I would like some liquid left in the jars when they are done. Thanks Jeni.

      Yes, I always make taco seasoning homemade, I will do a vid on my seasonings soon! I have canned taco meat in the past. Not as much anymore because my husband doesn't care for canned ground beef, but I do! I have a vid coming out friday you might like! 😊

    When mentioning canning bone-in chicken below, I was wondering... if I put the chicken skin and bones in a quart jar and filled to a 1-inch headspace and processed, would it make a good bone broth? I know time is important to "leach" out the minerals, but maybe adding a little vinegar? The last bone-in skin-on breasts that I got ($.89/lb) were so huge that they would not fit into the jars! So I removed the meat from the bones and used the skin and bones for some broth that I used for a casserole. Just trying to think of quicker ways to make bone broth instead of using other means, since I'd be canning anyway and it may be a way to fill in an empty space or two during a session (I usually can some water). Anyway, thanks for letting me pick your brain! ;-)

      Yes, I would add liquid to one inch and yes, add a tsp of vinegar to each jar, you want all the collagen into the broth! Hopefully you can fit a couple pieces of chicken in, but if it’s the broth you are wanting, even one piece in a jar is good. 😊

    The reason for soaking beans is to remove the feitic (sp?) acid. I'm concerned that this method does not give it enough time to do that. Any info on this?

      It is in fact, lectins and yes, this method kills off as many as soaking overnight. 😊

      They are moved off the hot burner! They are only on the burner to cook for 2 minutes. 😊

    I have never canned beans, only cook them to eat. I have never soaked them at all. Is the purpose to reduce cooking time?

      No, the purpose is to reduce the lectins. Lectins are what cause stomach upset for most people when eating beans. 😊

      Bad beans float, but they all shouldn't do that unless they are old.

      They just turn to mush in the bottom of the jar if you have too many. Not by any means are they unsafe. 😊

      The are pintos. Pintos range in color and if you buy several packs, they may be different shades. Those were the end of several bags thrown in together. 😊

      I have canned thighs and legs, some together and some separately. I haven't tried them yet, though, but by leaving the skin on, it made a beautiful broth in the jar.
