Wow amazing, I came last year in February which was kicked off by some Gurkhas I worked with showing and teaching me about their amazing country.
Your not wrong, Nepali food is just so tasty or mitho cha! And I cant believe you met the Didi from Kanchi Kitchen, i love watching her videos.

This looks amazing. Things you missed (Newari meats): chwela/choila, hakkula, dyakula (buffalo slow cooked curry), etc.
(nepali meats): sekuwa (bbq/kebab), Bhutan, hyakula, sukuti (dried meat)
Veg: mustang aaloo, pani puri and chatpate(south Asian street food), juju dhau (king yogurt), gundruk (fermented greens), etc.
I haven't be there for over 12 years now, man I think I know that #3 bara place should be at Krisnamandir Patan. I'm going to be there straight out of the plane this summer :)
