She shared the same process demonstrated in this video! Sometimes, if I don't have bonito flakes, I use 2-3 dried shiitake mushrooms for the stock along with the kombu. It's a classic, easy, delicious recipe.
This is just lovely as a light breakfast. I live in the Pacific Northwest and right now it's cold and raining most days, which just drives the chill into your bones. This miso soup is just what I needed to pick me up in the morning! I didn't have wakame, but I had the stem end of some romaine Lettice leaves that added some texture and a bright, green flavor to the soup. Very satisfying 😊.

Based on the type of dashi (we have 6 varieties) and type of miso (countless!), miso soup varies in taste... and there is no best in my opinion because everyone's preference is different. It's a part of fun to figure out what brand or type of miso you enjoy. :)
It looks even easier than than I imagined. Have you tried it with smoked Tofu? My girlfriend is vegan and we use it often in ramen and other dishes, but I haven't tried it in miso soup yet. I use to make dashi with Shitake so we both can use it and I think it taste better than the one with bonito flakes... 😅
I've never used smoked tofu for miso soup before. Interesting! It might be a nice vegan option to meat/seafood miso soup. Majority of miso soup in Japan is typically made with anchovy dashi (iriko dashi) OR awase dashi (kombu + katsuobushi). As for shiitake dashi... it's not a common dashi to use for miso soup because we think dried shiitake tastes too strong. Only exception is vegan dashi (kombu + dried shiitake dashi), but not commonly used just yet. :)
We can't "buy" dashi, unless you use dashi powder (I don't recommend) or dashi packet. If you want to make it easy, buy this dashi packet (my favorite: amzn.to/3HTSxOf). It's like a tea bag, and easy to use!
I need to get the packets to make the dashi. I tried to use chicken stock before, but it's definitely not the same. I also had the wrong seaweed. I need to try it again with the right ingredients.

Dashi-included miso (だし入り味噌) may seem convenient as you don’t need to prepare dashi; however, you can’t expect to enjoy the same health benefits from it. To maintain quality and taste while preventing the container’s expansion, the manufacturer has to add additives and sterilize it by heating, which stops the action of yeasts. So, I don’t recommend opting for dashi-included miso.
I dont have gas range. I have to adjust electric stove's temperature a little higher than medium low heat as well as almost to a boil. I miss having gas range stove top

You may mix Miso with a little liquid in a dish before putting it into the soup, or you can use a ladle to blend them.
If I had gotten miso broth consecrate instead of miso paste can I still use dashi broth to help the flavor or no?
Yes. Instead of water, try Dashi and adjust the taste!
