Vegetable Miso soup ☆ No Dashi

  • Ingredients:
    ☆ Vegetable / Chinese lettuce , Carrots, Asian Mushroom , Onion
    ☆ Miso
    ☆ Use Chinese lettuce for best flavour.
    You can also cook with other vegetables/ Cabbage, Leek, Aubergine, Beansprouts, Spinach, Daikon Radish, Potatoes....
    Spinach will wilt very quickly so Add the Spinach near the end of the cooking time.
    It’s a simple and delicious miso soup without “Dashi”.
    You can get a nice flavour from vegetables, not needing to use “Dashi”.
    A tip to make the delicious Miso Soup without Dashi is to cook with a small amount of water first, then adding more water later.
    It makes the soup sweeter and flavoursome.
    Easy way to eat more vegetable.

    I made this today and it came out great just as described. I was going to use vegetable stock but decided to just go with water. In my opinion the secret is in the miso you use. Thank you for simplifying things for me.

    I have my own version of miso soup which is so simple but its tasty . I dont use any dashi or seasoning. I just use an apple as flavoring and it complements well in the miso paste ince it is combined.

    Using Occam’s razor: make the miso soup base, add veggies of choice, simmer 10 minor so. Add scallions before serving.

    Mixture of white & brown miso would make a trick, but being Japanese without dashi (stock) I'm skeptical of the last stroke. Surely very light. (is it plain miso paste or the seasoned one?)

      Hi Hiroko-san, thank you for your message. I’m trying to bring out natural flavors from the vegetables used. I’m living outside of Japan, so my selection of miso paste is limited. I’ve use non-seasoned miso in this recipe.

    There is vegan Dashi called 'Konbu dashi' you can put it with Miso.I think taste will be thicker and good。

    Wonderful! Is there a suggested substitute for the mushrooms? Or just omit them? Asking as I don’t like mushrooms

      Thank you for watching my video. The minimum recommended ingredients are Miso, Chinese lettuce, onion/leek and carrots. Replace the mushrooms with any other vegetable you like the flavor of. I hope you enjoy it and have fun with experimenting. 😊

      Miso is sometimes very salty- I don't add salt when I make miso soup, so that might be why
