Depends if it's gi or no gi. In GI I try to go for the classic Roger Gracie cross collar strangle. Nice thing is if you get reversed you can still finish it from guard. Hit that in my 2nd competition. If I can't finish the cross collar, I then isolate an arm and go for the Gatagatame finish. In no GI it's almost always Gatagatame finish.
I usually go for the Ezekiel first before they have chance to get their hands up to protect. If they do get their hands up, it usually opens the elbows and I can switch to other submissions. Mounted triangle is my favourite 👍

Maybe different gyms teach different things. At ours, classic mount is when you're essentially mounted and hip to hip. High mount is when your hips are essentially on your opponent's chest and your knee are pretty much in their armpits. S-mount is when you transition from high mount to the s mount configuration, where you can either arm-bar or convert to a mounted triangle. At least that's what we've been taught.

The arm in ezequiel comes on fast and hard to see it coming from behind!
