I am Puertorican and grew up eating my culture's food but I never noticed how easy it is to turn puertorican food vegan because most dishes aren't animal based. (except for lechon, bacalao, etc.) It was one of those things I never questioned until now because veganism felt like an American idea. Also, I'm glad tostones are vegan because they're my favorite food and don't want to abandon them.
Agh that is so true. Veganism does feel very American. Hahha yes I love tostones! I dislike maduros unfortunately. But something else I've made recently is Yuca with garlic and onion with some rice and beans. So that was a nice change to the things I've been having. I also want to try my hand at vegan pasteles but I am afraid of the challenge hahaha. 😆
OrdinaryPen My babies are boricua and I'm excited about veganized versions of this cuisine. Tostones w/ a sprinkle of salt are addictive. Try Hawaiian Maya plaintain, it's bigger than plantain & fries faster. I found Maya plaintain at Asian grocer.

it's the reason why going vegan was so easy for me plus I love new experiences and this one is making me healthy. Thanks for sharing these recipes that are great.
Just as a tip I think you should look into sprouted rice and beans. It's a lot better because rice and beans contain phytic acid that locks up some of the minerals and doesn't allow your body to absorb them. Sprouting solves that problem.

The Sopa de Gandules reminds me of Sancocho... is it the same thing ?? My abuelita used to make sancocho when I was a kid and I miss it sooo much. Your sopa de gandules looks very similar to her sancocho.
Hi Melissa. I don't think it tastes the same at all. It's worth trying. It tastes like PR seasoned vegetable broth with gandules and the bolitas de platano taste like masa de pasteles.

I knowww. Omg they think just meat is a dish lol. My partner is PR and Cuban. He just had Thanksgiving with his Cuban side this year and the older people were soooooo confused as to what he ate lol. They had meat, moro, yucca with garlic, and chicharrones de guayaba. So he ate everything except the meat and his grandmother prepared a side salad for him lol. No, I'm happy though because we are making little splashes in our family. Influencing them to try our food and they're more conscious of what they're eating.

Hi Nina! Yes a women here on UA-cam. Her channel name is Sweets and Beyond. I don't use store bought Sazon as it isn't vegan and I just look at her videos and omit/substitute on non vegan foods. And change the water content as I use brown rice and she uses white =D OH andddd I finally made your lotion recipe it works very well doesn't leave my face oily at all and I don't break out from it YAY!
@@JaciniaPerez The bolitas de platanos rock. I make them all the time. Before I roll them into balls, I season the "masa" with: Adobo, Cumin, thyme, and oregano. I mix it real good and them throw the balls in a pot with boiling water. The water has to be boiling, otherwise the balls will break. I'll let them cook "alone" for a good 15-minutes before I add the beans i'm using along with vegetables and potatoes. They're also great with pasta dishes.
@@lulolancy YESSSS! That's really good. I do it similar but I just throw the balls into the pot of beans until they get soft. I love them! It's a nice change up to a standard pot of beans. You're making me want some o n my next meal plan.

Do you have a recipe for vegan rellenos de papa? My late mil, who emigrated from Puerto Rico in ‘62, was a phenomenal cook (should have opened her own restaurant). I remember her showing me how to make rellenos de papa, but it had a turkey filling.
I do not actually and the funny this is that was my FAVVVVVVV thing to eat when I was younger. I never learned the potato part and I also don't fry food at all. I have a vegan empanadas video that shows 3 different fillings you can use and with that if you know how to make the outside part you should be set. The empanadas video is in the puerto rican playlist, there's so many recipes and ideas for meal prepping there.

Woah Angelique! That would be an amazing thing to replicate, like I've never thought of it. Do you mean the dry one by goya that you mixed with water? Because I would think something like chickpea flour (almost like a "floury" egg and Worcestershire sauce (fishy) would be an okay base. As far as bacalao, I've tried it when I was little but never ate it 🙁 (I was picky and difficult to feed).
I live out in Iowa so it's been a while since i had it.But now that you mention it the chickpea flour would be an excellent idea. yea the bacalao, i am not sure of a good replacement.

Hi Uma, I have not invested in one and don't intend to. But there is someone on youtube that has the Breville oven with the air fryer. Her name is Jill McKeever and she's whole foods plant based vegan. I usually bake potatoes without oil and it comes out fine. If I were to experiment I would try to bake plantains with vegetable broth for some moisture. Last comment is mangu (mash boiled plantains with water and salt and other spices if you want). Yes. I mean my partners mom owned an air fryer and (they're not vegan) she was making chicken without oil. She went to pull the handle and a bunch pf grease fell on her calf and shin. She went to the ER and has permanent scars. She never used it again so when I came here I gave it away for free on craigslist. They sound horrific but then again I don't know much about it.
Yes Uma, what I'm thinking is the chicken made it's own grease. But I'm not sure if that can happen with what you'll be cooking as a vegan. Like I don't know if the things we cook can produce their own oils.

Hi Elsa! Sounds beautiful. Ceviche has beer right? I've never had it in my life. Throw a plantain and garlic clove in the food processor. Blend but chopped not mushy. Then form balls and throw them in the soup. You can also add salt to taste. I love them, they remind me of pasteles. But the texture the next day is like idk...dried out and tougher.

I do use sazon but it's homemade (doesn't taste the same because of the unami msg flavor) but it is close. I think the badia sazon nis vegan. I do not make my own adobo, why do you want to make your own? Cost? Health? I would love to know.

I had to stop using sazón because it gives me horrible migraines. But remembered that my grandma always used olive oil with achiote seeds. U must know about this they use it to put it on the pasteles to keep them from sticking to the paper or plátano leaf. Anyways I use a lil bit of that oil to give some coloring to my food and that’s all. no need for all the seasoning as u already have the same seasoning in the adobo
Interesting. Yes I have a video on Pasteles. But I use a homemade sazon. It doesn't taste like it as it doesn't have MSG but I'm super happy with it. That was an interesting bodily reaction you had to it.
On the island there are many vegans and vegetarians. Even restaurants and products at the store. The cuisine can be made vegan very easily. I published a cookbook two months ago with 55+ Puerto Rican Vegan Dishes. It's been well received and I cook for people all the time. They love it. I think it's worth trying.

I am struggling because I felt pretty clueless on becoming a vegan, how happy I was when I bumped into your video and notice, hey I make all these recipes to begin with & they’re delicious. However, these meals are high in carbs. Do you have any other meals that you know of that are low in carbs that you wouldn’t mind sharing?
Ooooh that's a hard question to answer lol. BECAUSE I get so confused about carbs since certain vegetables can be carby too right like peas and carrots or is that startch? I get the two confused. I do make this SUPER delicious puerto rican black bean burger so you can do that on a bed of greens and avocado dressing. or make lentil balls (season with sofrito, adobo, sazon) and put them on a bed of zuchinni noodles and seasoned tomato sauce.

My mother made the potato salad with peeled apples and red bell pepper cause I would not eat it with the onion and red pepper🤢my main family is from Ponce. I think recipes vary depending on region, also names vary.

Hi Ilovepink, that's sooo weird, you're the second person that has told me that. I had to check out my partners families kitchen. They have two varieties of sazon. Con Ajo y cebolla (which seems vegan- I'm very surprised) Still has MSG and it says "Spices" and "Natural Flavor" Con Culantro y Achiote (which has Yellow 5, Red 40, MSG) But yea maybe the sazons change by region? I don't know, what do you think? MUCH love and abundance.
well first of all i would just like to say that your tag line at the bottom is very sweet and that yellow 5 and red 40 are both typically vegan but after i did a bit more research i saw that they are sometimes tested on animals granted there are many different websites that say different things so i guess its just how you perceive the information and how cautious you are
Thank you for that extra research. I guess I'll just be cautious and use the homemade sazon from sweets and beyond. It does not taste as amazing as sazon since sazon gives you umami flavor reallness from the msg. But it is still a great alternative. 💛💙
That's terrible, I really don't do much research on the color number combinations because if I see it on a package I avoid it immediately. It just seems crazy to add something called red #40 to my food. They couldn't even bother calling it something else. Lordt. I make my own too, granted it's not as delicious but I'll sacrifice it. 😊
Ohhh the legit recipe I use for that is by Sweets and Beyond here on UA-cam and it's naturally vegan. But her recipe gives me heart burn because there's too much acid. I would love to know if yours is different from hers lol. Because I'll start making it your way...shoo
Asopao de Gandules with Platano Dumplings: STEW: 3 Tbsp olive oil 1/2 green pepper 1 small onion 2 garlic cloves 1 Tbsp capers 12 stuffed olives 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp cilantro 1/2 tsp oregano 1 tsp cumin 3 cups vegetable broth 1 8oz can of tomato sauce 2 15 oz cans of Gandules DUMPLINGS: 2 large green plantains, peeled and finely grated 1 Tbsp corn starch or arrowroot 1 tbsp ground flaxmeal mixed with warm water 1/2 tsp each of: dried cilantro parsley salt black pepper garlic powder Add all the stew ingredients to the pot and bring to a slight boil. Mix the dumpling ingredients in a food processor. Form dough into balls and drop into the boiling stew. Cook until the balls float to the top and are cooked all the way through. Serve as is or over rice.

Just as a tip I think you should look into sprouted rice and beans. It's a lot better because rice and beans contain phytic acid that locks up some of the minerals and doesn't allow your body to absorb them. Sprouting solves that problem.

I knowww. Omg they think just meat is a dish lol. My partner is PR and Cuban. He just had Thanksgiving with his Cuban side this year and the older people were soooooo confused as to what he ate lol. They had meat, moro, yucca with garlic, and chicharrones de guayaba. So he ate everything except the meat and his grandmother prepared a side salad for him lol.
No, I'm happy though because we are making little splashes in our family. Influencing them to try our food and they're more conscious of what they're eating.

Hi Nina! Yes a women here on UA-cam. Her channel name is Sweets and Beyond. I don't use store bought Sazon as it isn't vegan and I just look at her videos and omit/substitute on non vegan foods. And change the water content as I use brown rice and she uses white =D OH andddd I finally made your lotion recipe it works very well doesn't leave my face oily at all and I don't break out from it YAY!

@@JaciniaPerez The bolitas de platanos rock. I make them all the time. Before I roll them into balls, I season the "masa" with: Adobo, Cumin, thyme, and oregano. I mix it real good and them throw the balls in a pot with boiling water. The water has to be boiling, otherwise the balls will break. I'll let them cook "alone" for a good 15-minutes before I add the beans i'm using along with vegetables and potatoes. They're also great with pasta dishes.
@@lulolancy YESSSS! That's really good. I do it similar but I just throw the balls into the pot of beans until they get soft. I love them! It's a nice change up to a standard pot of beans. You're making me want some o n my next meal plan.

Do you have a recipe for vegan rellenos de papa? My late mil, who emigrated from Puerto Rico in ‘62, was a phenomenal cook (should have opened her own restaurant). I remember her showing me how to make rellenos de papa, but it had a turkey filling.
I do not actually and the funny this is that was my FAVVVVVVV thing to eat when I was younger. I never learned the potato part and I also don't fry food at all. I have a vegan empanadas video that shows 3 different fillings you can use and with that if you know how to make the outside part you should be set. The empanadas video is in the puerto rican playlist, there's so many recipes and ideas for meal prepping there.

my hubby who doesn't follow a whole food low fat vegan diet like i do was wondering if you Have tried making bacalaitos. I was brainstorming what would be a good replacement for the bacalao? jackfruit?
Woah Angelique! That would be an amazing thing to replicate, like I've never thought of it. Do you mean the dry one by goya that you mixed with water? Because I would think something like chickpea flour (almost like a "floury" egg and Worcestershire sauce (fishy) would be an okay base. As far as bacalao, I've tried it when I was little but never ate it 🙁 (I was picky and difficult to feed).
I live out in Iowa so it's been a while since i had it.But now that you mention it the chickpea flour would be an excellent idea. yea the bacalao, i am not sure of a good replacement.

Have you or anyone else invested in an airfryer thingy? I want to try tostones that way but without the oil if at all even possible
Hi Uma, I have not invested in one and don't intend to. But there is someone on youtube that has the Breville oven with the air fryer. Her name is Jill McKeever and she's whole foods plant based vegan. I usually bake potatoes without oil and it comes out fine. If I were to experiment I would try to bake plantains with vegetable broth for some moisture.
Last comment is mangu (mash boiled plantains with water and salt and other spices if you want). That is my FAVORITE way to eat plantains. Yum

Yes. I mean my partners mom owned an air fryer and (they're not vegan) she was making chicken without oil. She went to pull the handle and a bunch pf grease fell on her calf and shin. She went to the ER and has permanent scars. She never used it again so when I came here I gave it away for free on craigslist. They sound horrific but then again I don't know much about it.

Yes Uma, what I'm thinking is the chicken made it's own grease. But I'm not sure if that can happen with what you'll be cooking as a vegan. Like I don't know if the things we cook can produce their own oils.

Hola Hermana!!! I have links in the description to some of these meals and I also have a cookbook. I can't make a lot of these meals anymore because we live in a van now and that's why I made the cookbook before we moved. We only have one burner in the van and limited electricity.

Hi Elsa! Sounds beautiful. Ceviche has beer right? I've never had it in my life. Throw a plantain and garlic clove in the food processor. Blend but chopped not mushy. Then form balls and throw them in the soup. You can also add salt to taste. I love them, they remind me of pasteles. But the texture the next day is like idk...dried out and tougher.

I had to stop using sazón because it gives me horrible migraines. But remembered that my grandma always used olive oil with achiote seeds. U must know about this they use it to put it on the pasteles to keep them from sticking to the paper or plátano leaf. Anyways I use a lil bit of that oil to give some coloring to my food and that’s all. no need for all the seasoning as u already have the same seasoning in the adobo
Interesting. Yes I have a video on Pasteles. But I use a homemade sazon. It doesn't taste like it as it doesn't have MSG but I'm super happy with it. That was an interesting bodily reaction you had to it.
In Puerto Rico is there Vegan & vegetarian meals? I'm thinking about becoming a vegan
On the island there are many vegans and vegetarians. Even restaurants and products at the store. The cuisine can be made vegan very easily. I published a cookbook two months ago with 55+ Puerto Rican Vegan Dishes. It's been well received and I cook for people all the time. They love it. I think it's worth trying.
My Question to you is there any Vegan or vegetarian places in Puerto Rico?
@@chrissystewart6268 Omg yes, some restaurants in PR have followed me on instagram. There's even this amazing meals on wheels for the homeless in PR. I'm going to try to find that for you because they offer free classes and education for people wanting to go vegan!

I am struggling because I felt pretty clueless on becoming a vegan, how happy I was when I bumped into your video and notice, hey I make all these recipes to begin with & they’re delicious. However, these meals are high in carbs. Do you have any other meals that you know of that are low in carbs that you wouldn’t mind sharing?
Ooooh that's a hard question to answer lol. BECAUSE I get so confused about carbs since certain vegetables can be carby too right like peas and carrots or is that startch? I get the two confused. Um I have a playlist in the description of PR vegan food. I do make this SUPER delicious puerto rican black bean burger so you can do that on a bed of greens and avocado dressing. or make lentil balls (season with sofrito, adobo, sazon) and put them on a bed of zuchinni noodles and seasoned tomato sauce.
I'm excited to try everything bc I'm a brand new vegan.

I had Puerto Rican potato salad once with Apple in it was that something that you guys make or was it just that person being creative if this is something that you all do can you let know how to make it because I really enjoyed it

My mother made the potato salad with peeled apples and red bell pepper cause I would not eat it with the onion and red pepper🤢my main family is from Ponce. I think recipes vary depending on region, also names vary.
Thank you for answering this. As an adult I still don't like sweet items in my savory foods. Like strawberries and clementines in my salad lol. So I really didn't know the answer to this question.

Hi Ilovepink, that's sooo weird, you're the second person that has told me that. I had to check out my partners families kitchen. They have two varieties of sazon.
Con Ajo y cebolla (which seems vegan- I'm very surprised) Still has MSG and it says "Spices" and "Natural Flavor"
Con Culantro y Achiote (which has Yellow 5, Red 40, MSG)
But yea maybe the sazons change by region? I don't know, what do you think?

well first of all i would just like to say that your tag line at the bottom is very sweet and that yellow 5 and red 40 are both typically vegan but after i did a bit more research i saw that they are sometimes tested on animals granted there are many different websites that say different things so i guess its just how you perceive the information and how cautious you are
Thank you for that extra research. I guess I'll just be cautious and use the homemade sazon from sweets and beyond. It does not taste as amazing as sazon since sazon gives you umami flavor reallness from the msg. But it is still a great alternative. 💛💙
The ones at Walmart does have ADHD causing dye red #40 and I think yellow color too.
I'd rather make my own natural mix w/ ground garlic, turmeric etc
That's terrible, I really don't do much research on the color number combinations because if I see it on a package I avoid it immediately. It just seems crazy to add something called red #40 to my food. They couldn't even bother calling it something else. Lordt. I make my own too, granted it's not as delicious but I'll sacrifice it. 😊

Ohhh the legit recipe I use for that is by Sweets and Beyond here on UA-cam and it's naturally vegan. But her recipe gives me heart burn because there's too much acid. I would love to know if yours is different from hers lol. Because I'll start making it your way...shoo
Asopao de Gandules with Platano Dumplings:
STEW:
3 Tbsp olive oil
1/2 green pepper
1 small onion
2 garlic cloves
1 Tbsp capers
12 stuffed olives
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp cilantro
1/2 tsp oregano
1 tsp cumin
3 cups vegetable broth
1 8oz can of tomato sauce
2 15 oz cans of Gandules
DUMPLINGS:
2 large green plantains, peeled and finely grated
1 Tbsp corn starch or arrowroot
1 tbsp ground flaxmeal mixed with warm water
1/2 tsp each of:
dried cilantro
parsley
salt
black pepper
garlic powder
Add all the stew ingredients to the pot and bring to a slight boil. Mix the dumpling ingredients in a food processor. Form dough into balls and drop into the boiling stew. Cook until the balls float to the top and are cooked all the way through. Serve as is or over rice.

2 Cans Guandules8 cups water3 tsp broth (Better than Bouillon)1/2 cup rice1 plantain 1 garlic clove1/4 c onion2 Carrots8 ounce tomato sauceoregano cumin black pepper

which vegan mayonnaise do you use?
I make my own now but in the past have used the trader joes one (more watery), the just mayo one (extremely thick), and the Hellmans? (can't spell it) vegan mayo.

Hi Indira 🙋 I feel like yams is a pretty good replacement for calabaza. I would give it a try, especially if you love yams. People also use carrots. Hope that helps. 💙
