I love making pizza dough for our family pizza night. I took a recipe and adjusted it for sourdough when I got a starter. I usually make it with discard but I've done it before with active starter and no extra yeast. It just takes a lot longer. I put everything in the mixer at once and let it run for about 10 minutes then I leave it covered on the counter till we are ready to make them. Usually mix at 10am, start rolling at 5pm. 420g Flour 100g sourdough discard 25g sugar 2(ish)g active dry yeast 15-20ml olive oil 9g salt 235g Water

Hi Andrea! Love your videos. You give me ideas of things to make for dinner 😊. About your pizza dough- it looked dry and possibly tough. I like a very tender crust. I accomplish that by definitely kneading the dough for about 6 minutes in the Kitchen Aid. Then I let it rest and rise as if it were going to be a loaf of bread. 45 min later it should be soft and silky to the touch. Then I roll it out or stretch by hand depending on my mood 😊. Wish I had a pizza oven like yours!

I follow Becky Excell for lots of gluten free & dairy free recipes 😋 she really does have some spectacular makes. Its not easy being free from virtually everything and still find something tasty and filling to serve up. Love your sewing projects & Autumn is definitely on the door step in the uk, im not ready to say goodbye to summer yet so ive booked a holiday in Greece for a couple of weeks 😂...then when i return it will be very much Autumn and gloomy out.

As an Italian I always hesitate because I do not want to offend yet I know that I myself would want to know the correct way of saying it! Hopefully many of the servers I encounter feel the same way😊.
Hey Andrea, regarding the pizza dough…try this simple recipe: 2 tsp yeast 1 tsp sugar 400ml warm water 600g bread flour 2 tsp salt Combine yeast, sugar and water and let sit for 5-10 mins in a warm place until frothy. Mix together flour and salt, then add in yeast mixture. Knead dough for about 10 minutes (maybe less if using a mixer). Let rise in a warm place until about doubled. On a hot day this will only take an hour or two. On a cold day, put it in a sunny spot or in a warmed oven, and it will probably take longer to rise. Turn dough out onto a lightly floured bench and divide into four. Shape loosely into balls and let rest for 5-10 mins. *Stretch* into shape. Do not use a rolling pin as it squishes all the beautiful bubbles. Add sauce and toppings and bake as per usual. Looking at your dough in your videos it looks a bit lifeless. Make sure you’re giving it enough time to rise (and remember that cold dough takes longer to rise. So important to watch the dough, not the clock). Your dough should be soft and stretchy; you shouldn’t have to roll it into shape like a pie crust. Wishing you all the best in your pizza endeavours 🍕☺️

PLEASE stop usiong your mandoline without the finger protector. DO NOT teach your viewers that this is ok. I worked for Williams Sonoma for 25 years. I have seen more than my fair share of serious finger injuries by not using the pusher/finger protecter from simple stitches in theemergency room to surgeries. PLEASE, PLEASE use this peice of kitchen equipemnt responsibly.
I would think that an adult who has one would know to use a finger protector if it's needed without seeing it on this channel 😊 I have never used one and I haven't ever cut my fingers so bad I needed to go to ER 🤷♀️ I use my pretty much daily. 😊
