The second racking ( process of collecting the fermented juice) it should be siphoned leaving the " must" (sediments from fermentation) behind. You will loose some wine, but you get clear wine with no dirty sock taste. This wine will have a nasty flavor with all the sediments in it. You wont know unless you have tasted properly made wine.
I believe the must is the pulp and crushed fruit. The sediment that consists of dead yeast cells that sink to the bottom of the container is called the lees.
This is great simple way of making home made Red Wine. Well done! But looking at the video you apart from the actual grapes, you used sugar, yeast and some spices. What is the name of the spices you used there and what quantity in terms of grams? Please share.
Don't you think sealing the jar with tape can be risky because fermentation can cause the bottle to explode, normally we just tie the mouth with a cloth and put a rubber band around and then every day you are putting fresh tape, not only tedious but expensive because for how many days you will do it you might use 2 rolls of the tape

@@CraftVillage No ...🤔 Yeast consume sugar to produce more alcohol and that is the objective. Otherwise you ll have to wait longer to consume your wine.
The reason being - wheat Wheat or broken wheat is used to increase the strongness in home made wine, he mixed the wheat into the whole mixture. What I did is, pack handful or 200gm of wheat in a cloth pouch and put it with the mixture and take it out after 15 days so that the wine is not too strong to drink 👍 And if you feel it's not strong enough, you can keep it stored underground (i literally dug a hole in the ground) for a few days 😊

You could have filled little less ingredients about 75% of the container and everything would be ok. I have made the same recipe and stirred daily twice. First stage to be completed by 21 days, strain and add remaining sugar. Leave for 6 months to a year for best taste.

Very long and tedious recipe which is so easy. I better stick to my recipe. All the best to the others who don't mind going through this process

I made this once. It's very sweet to start with, but after 3-4 months it's drier and very strong. The fumes can get you drunk!!!
