      Grape juice will not work for this short version of wine, as we are boiling the grapes initially.

      Hi, with this recipe, the alcohol % willl be around 10%. Whole wheat is normally added to increase the strength of the wine. You can avoid it, if you don't have it.

      We have not tried mixing green and black grapes together. The taste of the wine is important but the color is also equally important. By mixing the grapes, you will lose the color.

      Yes CO2 will be produced while fermentation and it needs to be let out. Always keep the lid with a small gap. If you do this, you do not need a balloon mechanism to let our gases. The yeast used is instant yeast used for bakery products.

      It's about the same as drinking a very low abv beer( this recipe can realistically only get to about 4 or 5%). Adjust the recipe a fair amount, and then you're talking.

      Increasing sugar quantity will increase the alcohol level in wine. You can moderately increase the sugar quantity, but too much of sugar may remain un-dissolved and not good for health.

      Increasing the amount of sugar in this recipe will only make it sweeter. You would have to adjust the ratio considerably to increase the abv. Yeast can only tolerate a certain amount of sugar and a certain level of abv. Bread yeast, under great conditions, maxes out around 10%. Champagne yeast will get to around 18%. But again, to achieve that, and have it taste good, you need to provide the yeast with a proper environment, which includes food(sugar and other nutrients, ambient temperature, and other variables. The spices cover up the lack of flavor and / or off flavors. When yeast is stressed, they can release some really nasty tasting and smelling esters over time. Cute video, though.

      We have done this multiple time, and it has given us good result. The only thing you should make sure that you do not keep the wine for long without checking the taste. You will know if it is a good wine or not, when you open the lid. If there is any foul smell, just discard it.

      Wine needs to be kept for 2 weeks to have 10% alcohol. After 3 days, the alcohol content will be less.

      I've been brewing wine, cider, and mead for almost 2 years. With that ratio of sugar to liquid, you are lucky to get 5% abv no matter how long you let it ferment. The yeast could never eat that much sugar in that environment. It has to be a fairly sweet spiced "wine ". The only thing aging will accomplish would be allowing the solids to drop out of suspension and become clear. Would end up being a very light pink color. Double the liquid and give it more time and you will get closer to 10%. Of course, without a hydrometer to measure the starting and ending specific gravity, it's a complete guess. Also, that's a pretty good way of knowing if the yeast is done doing their job. Cute video anyway.

      Thanks. You are right, without a hydrometer, we can only guess the alcohol % . We are planning to make more wine for this Christmas. We will also get a hydrometer to measure the alcohol content.

      Hi, you can lower the ratio of ingredients proportionately for making lower quantities. Please ensure you lower the quantity of yeast based on the ratio of ingredients. This will work.

      When fermentation takes place, co2 will be produced. This gas needs to be let out. That is the reason, why you should only fill the bottle with 2/3rd wine, also the lid should not be air tight. If it is air tight, then the bottle will explode. If you can seen our video, we would have closed it with a lid with a small gap, to let gases escape. We also tied it with a cloth, so that insect do not enter the bottle.
