The easiest & the simplest way of cooking adobo is to marinated the pork/chicken with bay leaves, onion, garlic, corned pepper, vinegar, soy sauce (salt/sugar is optional). Put in on the fridge whole night. Put it on a pan & let it boil! Add a little amount of water & keep it on medium heat till it caramelized. Thank u for promoting our Filipino dishes! Ingredient....Chicken, chili leaves, ginger, black Pepper,
1st : ginger n chicken gisa mo
2nd put water after boiling put black pepper ..magic sarap or chicken brut ...seamer last put leaves

Because it has VINEGAR, you can keep the ADOBO for few day and recook it. We Filipinos love Adobo when it stay for FEW DAYS because it's more tastier. VINEGAR kill the bacteria that spoil the ADOBO
If you have refrigerator, u can freeze it for month.

If you have whole black peppercorns it gives a better taste too. I cooked with whole peppercorns corn , bay leaves , onions , garlic, vinegar , soy sauce and a tsp. of sugar.

Have you tried adding soda ( coke or sprite instead of water)?
Vinegar major ingredient in making adobo.
You don't have to put sugar in the adobo.Just garlic onions salt black pepers soy sauce vinegar n bay leaves.Enjoy with rice or potatoes.

For pork adobo there are lots and varities of pork adobo in every provinces in our Country. one of the best is the Humba de bulto of Cebuano and Boholanos. the adobo is near as ham while its fat is creamy and salty sweet.
