Hi Andrei! If you're a vegan,you can also cook Pancit Bihon using vegetables only like carrots,shredded cabbage,sliced bell pepper .
mushrooms, green beans, can be added too.

Very impressed and happy that you and your family loved filipino cuisine. You can also add shredded cabbage, and celery( for added aroma). Philippine cuisine is really tasty and interesting. Its basically a mix of chinese/Japanese /Spanish /american
Filipino food are delicious but the problem is that we are not fond of fancy arrangements or preparation to make it really mouth watering.
Ooh looks tasty! 😋♥️ Pancit is party/celebration food in 🇵🇭 maybe like olivier salad. If there's a lot of pancit some may wonder "whose birthday is it?" or "what are we celebrating?" ))
Drops of patis (fish sauce) is nice too, aside from lemon or kalamansi...or a bit of chilli....

Andrei, you can also add French type sliced green beans and pea pods which are lightly cooked and added to the pancit after cooking it.
You guys did a good job looks delicious. Next time you can add some green like , cabbage, green onion , cilantro, mushrooms is good to. I’m glad that your family like to cook Filipino food.

On any pansit ,you can add cabbage, or sausages of your choice.springkle a little black pepper according to your taste and a squeeze of lemon according to individual tastes. Happy eating.❤❤❤😊
