I just made this and it's the most delicious broth I've ever made. Well worth it to source the correct ingredients. One suggestion to anyone planning to make this dish: taste your broth before adding the soy sauce. My veg stock was pretty salty already, so I only used half the written amount. Other than that... Perfection!!!

I just made this for lunch. But made it without lemongrass galangal as i did nit have them. Also used cashew blend as alternative to coconut milk. Made some adjustments. I put in some roasted potatoes and broccoli with grill taufu. It was awesome. Hubby just loved it. Thank you for the wonderful recipe

I am thinking to make this curry noodle soup for ages and today I finally made it for lunch, that’s really yummy. I actually homemade the chili paste few days ago, and I put extra hard tofu, broccolini and mushroom instead of tofu puff and bamboo, and all the veggies are pretty tasty, and it becomes my favourite curry now, thanks~~~~~
OMG! I made this dish this weekend. It’s off the chart delicious. Nothing beats fresh lemongrass and Lime Leaves. You have to use those. You know how people make every single one of Ina Garten’s recipe. My goal is to make every single of your recipe. There is not one that he failed me so far😜😃. Also, ppl should check their LDL level after eating every one of Ina’s recipe even if it’s over the course of months.🤣🤣

Made this today, with your soup recipe as well(without the cashew egg though :)). Added some coriander seeds (instead of curry powder) and some ginger along with galangal. Used red thai chillies, as I had them and needed to use them. Didn't have red bean paste too. Still it came out very delicious. I did special shopping to get all those special ingredients :). Thank you for making these vegan recipes. It is not easy to find vegan or vegetarian recipes like these that taste good as well. Now I can cook this Curry noodle soup with absolute confidence :-). Thank you!!
Okay, I am sure I would die form such a huge amount of chilli peppers XD I am rather sensitive to spiciness, so I guess I will have to lower the amount of the paste I will put in my own bowl ;P Having said that, the flavours seem worth making it yourself! So much nicer ingredients and stronger aromas, right? Just a fantastic, warming a and comforting dish! . Anyways, as always a great video. I just love your videos Will. They are so inspiring. This looks like a challenging recipe, but I am sure it will taste great. It looks like only some of the chili paste is used. Will it the balance store well? Should I perhaps heat it up and let it cool in a jar before storing? It looks very Thai-inspired. I just love lemongrass soups, and this paste seems to have the Thai triad (lime leaves, galagol, and lemongrass). If this paste has other applications, then maybe this would make a good separate video if you haven't already done one.
The addition of lemongrass and coconut cream sure makes the curry soup taste amazing!
