- Chilli Chicken is a family fave every time we go out for Hakka Chinese Food. The combination of fiery green chilli, dark soy, and sweet onions is so delicious.
I've cracked the code on this dish, and in this video I'll show you how to bring restaurant quality Chilli Chicken home with this super simple recipe. Once you start making it, you won't be able to stop :D

RECIPE
INGREDIENTS
To prepare the chicken
1 lb boneless skinless chicken thighs, cut into bite sized pieces
1/2 tbsp, grated fresh Ginger
1/2 tbsp, grated fresh Garlic
1 tsp, Black Pepper
1 tsp, Salt
1 tbsp, Soy Sauce
1 tbsp, Chinese Cooking Wine
4 tbsp, Corn Starch
Canola/Vegetable Oil for deep frying
For the sauce
2 tbsp Water
1 tbsp, Corn Starch
1/2 cup, Chicken Broth
3 tbsp, Dark Soy Sauce
1 tbsp, Rice Wine Vinegar
1/2 tbsp, White Sugar
Salt to taste
For the vegetables
2 tbsp, Canola/Vegetable Oil
1 medium Onion, sliced
1 tbsp, finely chopped Garlic
1/2 tbsp, grated fresh Ginger
4 Green Chillis, sliced
Sliced green onions to garnish
METHOD
Pour oil into a deep pan, and preheat to 350 degrees.
In a bowl mix together all ingredients for chicken. When oil is ready, add chicken one chunk at a time ensuring not to crowd the oil. Cook in batches for 4-5/minutes per batch or until chicken is crispy and cooked through the centre. Drain on paper towel and set aside.
In a bowl, whisk together water and corn starch. Once dissolved, slowly whisk in chicken broth, soy sauce, vinegar, sugar, and salt to taste. Set aside.
In a large frying pan heat oil on medium high heat. Add garlic, ginger, and chillis, and saute for an additional 15-20 seconds or until all ingredients are fragrant. Then add onion and sauté for 45-60 seconds or until just glossy, but still crisp. Remove from pan and set aside.
Whisk sauce ingredients once more to ensure the corn starch hasn't settled at the bottom, and pour into pan. Allow to come to a full simmer, stirring consistently until thickened and glossy. Add fried onions and chicken and toss to coat.
Garnish with sliced fresh green chillis, and serve alongside hot rice. Enjoy! :)
Literally searched up recipes for chilli chicken, looked for one that looked the most like federicks chilli chicken which brought me to your video and then you started talking about federicks and I instantly knew I picked the right video.
I have tried SO many chilli chicken recipes and it never tasted like the one you get at a Hakkah restaurant. But this is IT! THANK YOU

I loved it! The only tip I would give is to not use *dark* soy sauce (I used Pearl River Bridge) as it turns everything SUPER dark and salty. Regular soy sauce (Silver Swan for instance) gives you the result in the video. Anyway, I was so nostalgic for this dish from my time in Canada :)

Oh my God turned out amazing and sooo close to exactly like Federicks! Thank you! Anyone missing hakka food who moved away from the GTA needs to make this immediately. Probably using a little MSG instead of salt would make it even more identical to restaurant version.
We got fredricks on Dundas in Mississauga. Same owner from Scarborough.

Amazing recipe, thank you! Very similar to Frederick's. For those who don't have access to rice wine, I substituted with white vinegar and it turned out delicious.

I just made this following your recipe and it turned out amazing! Federicks/Tangerine chilli chicken is probably my favourite dish however I’ve always had a little issue with the batter to chicken ratio you end up getting. That’s not an issue anymore now that I have this recipe! I’m a new cook so this was my first time deep frying anything! Was so good to hear you mention Fredricks :) and this looks amazing.. but I have to say, we live in london ontario.. far from any hakka selection.. so we had to hunt and make this recipe ourselves few years back.. and what we discovered was.. remember how their sauce almost looked black in colour ? the differences being..try to not add sugar.. and add cumin in the marinade stage. it gives it a depth without tasting like a curry, and the sweetness of the fried onions comes through. We still order hakka from Lin garden aswell :) awesome.. keep em coming love your channel and recipes

Yes!!!! Federicks!! You should have seen everyone’s eyes open when you said federicks. It’s been the family go to place from childhood until now. Just had it yesterday. Grew up by the scab location and now near their Markham one.
I made it! Yes it was super great and 5 impartial foodies agreed! I toned the spice down a little and used serano peppers and cooked it with two green Thai peppers but whole and not cut up. I also added a teaspoon of sambal into the chicken Marinade. It was very high caliber. Don't know if it could get any better.

What’s an alternative to rice wine vinegar and Chinese cooking wine?- I don’t use alcohol xx
the alcohol will evaporate and cook out, you will not taste booze in your dish at the end.

You can get Chinese cooking wine at the Asian supermarket near Kennedy and Lawrence, the place name is Lone Thai Supermarket. Ask the staff for Chinese cooking wine, then grab a brown bottle with red labels. Shao Shing cooking wine.

fam Federick's Restaurant is 5 minutes away from where I live in scarborough. As a kid, my favourite dish was Garlic Chicken, but Chilli Chicken is good too.
When growing up in Mumbai, I used to eat occasionally at a place called Federick in Byculla. When I later moved to Canada, one fine day while driving around Scarborough, I noticed a restaurant on Ellesmere called Federick. What intrigued me was the fact that the name was spelled the same way as the restaurant in Mumbai (Federick not Frederick). So I decided to try it. I told the waiter about the restaurant in Mumbai with the same name and spelling. To my surprise, he said it was a branch of that same restaurant. WOW! Have since enjoyed many a chilli chicken there whenever we visit Toronto. Thanks for the recipe. Turned out really tasty (I used 3 times the amount of Thai chillies lol).
Hey Vijaya, this recipe is wonderful but quick question. You wrote dark soy but it looks like regular soy sauce. Generally dark soy sauce is much darker so my dish came out quite dark. Did you mean to say regular soy sauce?

The best chili chicken is at China Garden on Airport Rd. Its in the maxtel plaza in Rexdale. I've been trying for years to figure out their recipe without success. Yours is not it either but closest ive come to the real thing. Simple instructions and easy to follow. Good job!!

I had Fredricks once and it was horrible...... I hated their Chilli chicken, I don't know if its because Im used to the style of chilli chicken they make at Hakka Legend . The best Chilli chicken I have had in my life hands down goes to China Garden and Fayles.

Thank you Vijaya, the recipe was wonderful, I did do some substitutions though cause I didn't have some of the ingredients 😊 First I had chicken breasts only so used them then for the Chinese white cooking wine, google said you can use Japanese sake cooking wine called Mirin and I did not have the rice wine vinegar, subbed lemon juice and finally, I didn't have the guts 😊 to by chiles so I used Iron Chef brand Sweet Chili Sauce!! To me everything came out fantastic!!! Gracias!!!
